How to choose fresh frogs

- Prioritize choosing frogs that are still alive and have characteristics such as: slender head, bright eyes, thick thighs. These frogs are usually fresher than others.
- Limit buying dead frogs or those with overly large bellies as they may be farmed or have been dead for a long time, making them less tasty.

Prepare the frog
The frogs you buy should be skinned, gutted, and have their spines removed. Then use a knife to chop them into bite-sized pieces and wash them to remove the fishy smell with diluted salt water.
Tips for cleaning frogs thoroughly and removing the fishy smell
- Step 1: Remove all parts such as: head, skin, internal organs, spine, tendons, and blood vessels on the frog’s thighs.
- Step 2: Use a mixture of white wine and ginger to wash the frogs for about 5 minutes.
- Step 3: Blanch the frog meat briefly in a mixture of water, wine, ginger, and turmeric powder to completely eliminate the fishy smell.

Prepare other ingredients
Lemongrass, after buying, peel off a layer of the outer skin with your hands, then wash it clean and slice it thinly.
Remove the stems from the chili, wash it clean, and slice it.
Shallots and garlic, after peeling, should be placed on a cutting board and minced finely.
For the onion, peel it, rinse it with water, and cut it into small wedges.
Pick fresh basil leaves, wash them clean with water, and chop them finely.

Marinate the frog meat
After the frog meat has drained, put it in a bowl with 1/2 teaspoon of salt, then mix well and marinate the frog meat for about 10 – 15 minutes to allow the meat to absorb the seasoning evenly.

Prepare the sauce
Put into an bowl the seasoning mixture consisting of: 1 tablespoon of curry powder, 2 tablespoons of fish sauce, 2 tablespoons of sugar, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of salt, then use a spoon to stir well until the mixture is completely dissolved.

Fry the frog
Place a pan on the stove, add 3 tablespoons of cooking oil and heat over medium heat for about 2 minutes until the oil is hot, then add the frog and fry evenly for about 3 minutes over medium heat until the frog meat is firm, then turn off the heat.
Remove the fried frog to a plate to drain the oil.

Use the pan you just fried the frogs in and place it on the stove, then add 1 tablespoon of cooking oil, heating it over medium heat for about 1 minute until the oil is hot.
Next, add all the chopped onion and garlic into the pan, sautéing over medium heat for about 1 minute until the onion and garlic are fragrant, then pour in all the prepared sauce and cook over medium heat for another minute until the sauce boils.
Finally, season to taste, then add the frog meat, sliced lemongrass, and chili, stirring well and covering the pan. Cook on low heat for about 15 – 20 minutes for the frog meat to absorb the flavors.
After 15 – 20 minutes, the frog meat should be tender, and the sauce should have thickened. Add the onion, stir for about 2 minutes until the onion is cooked, then add the basil and stir briefly before turning off the stove.
