  • You should buy live frogs instead of frozen or pre-processed frogs to keep the characteristic flavor and nutritional content of the dish intact.
  • Choose frogs with a slender head, bright eyes, thick thighs, and brownish-yellow skin to ensure the freshness of the frog meat after cooking.
  • Avoid buying frogs that move slowly and have a bloated belly, as these are usually farmed frogs, which will not be firm and of the same quality as wild frogs when cooked.

How to choose good, standard lemongrass

  • You should choose lemongrass with thick, round stems that are not dry or wilted. When touched, they feel firm and are not bruised.
  • Choose lemongrass with a white tip that is not dull in color and has a light, pleasant aroma.
  • Avoid choosing lemongrass with spotted interiors, pale white leaves, or those that are dry and wilted. They may have been left out for too long and are no longer fresh.

How to choose spicy, quality chili peppers

  • You should select chili peppers that are straight or slightly curved, with shiny skin and green, fresh stems firmly attached to the top of the chili.
  • When holding the chili in your hand, it should feel firm and have a certain hardness, with the characteristic chili aroma lightly wafting at your nose and hands.
  • Avoid buying or choosing chili peppers that are wilted or have black spots, showing signs of rot and sliminess.

How to make Stir-fried Frog with Lemongrass and Chili

  • Preparation and marinating frog meat

    To clean the frog meat, after buying, you should rub the frog with 1 spoon of salt for about 3 – 5 minutes and then rinse with water. After that, cut the frog into small bite-sized pieces (you can leave them whole based on preference).

    Step 1: Cut off the head, skin, internal organs, spine, and blood vessels on the frog’s thighs.

    Step 2: Clean the frog using one of two methods:

    • Method 1: To kill bacteria and eliminate the fishy smell of the frog, you can use alcohol and ginger to wash the frog.
    • Method 2: You can also use vinegar and salt to wash the frog, which has a similar effect to method 1 but is less effective.

    Marinate 400g of frog meat for about 10 minutes with 1 tablespoon of minced shallots, 1/3 teaspoon of seasoning powder, and 1/3 teaspoon of monosodium glutamate, mix well to absorb the spices.

    Put a pan on the stove over medium heat, add 2 tablespoons of cooking oil, and sauté 1 tablespoon of minced shallots until fragrant, then add all the minced lemongrass and chili, stir-fry for about 3 minutes until the lemongrass and chili are slightly golden, then add all the marinated frog to stir-fry together.

    Stir-fry for about 3 minutes on medium heat until the frog meat is firm, then season with 2 tablespoons of fish sauce, 1.5 tablespoons of sugar, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, and 4 tablespoons of water, stir well for the spices to absorb.

    When you see the frog meat gradually change to a brown color, taste and adjust the seasoning, continue to stir-fry until the mixture thickens, then turn off the heat.
