- You should choose medium-sized tubers, with intact outer skin, not cracked, chipped, or bruised. When you pick up the sweet potato, it should feel heavy.
- Delicious, starchy purple sweet potatoes are round or elongated, without waist, dents, and when squeezed lightly, they should not be too hard. Avoid buying tubers that are too small, long, or have waists or dents.
- Damaged sweet potatoes will show signs such as black spots on the skin or being pitted, with water leaking out, and having a foul smell.
How to choose quality fresh eggs
- Observe the eggshell: You should choose eggs that have a dark brown shell, are evenly colored, with no cracks and no black spots. Particularly, fresh eggs will have a rough, slightly textured shell.
- Shine a light on the egg: You can check the egg by shining a light on it under a lamp or sunlight. If you see a small air cell, the yolk is round, does not move, and is balanced in the middle of the egg, while the egg white is clear, then it is a fresh egg.

Make caramel
First, place a pot on the stove, add 50g of sugar and a little water into the pot, then shake well.
Cook over medium heat until the sugar turns a chestnut color, then add lime and turn off the heat. Next, pour each spoonful of caramel into the mold.
Note:- Do not use a pot with a thin bottom as it can easily burn the sugar, causing the caramel to spoil.
- Do not stir as it will cause the sugar to clump; you should only shake it gently.

Prepare and steam purple sweet potato
After purchasing purple sweet potato, peel it with a knife, wash it thoroughly, then cut it into small slices. Next, steam the sweet potato until it becomes soft.

Make purple sweet potato milk mixture
After the sweet potatoes are cooked, place the potatoes along with 1.5 eggs and 1 egg yolk into a blender and blend until smooth.
Next, gradually add 300ml of unsweetened fresh milk and 35gr of condensed milk into a pot and stir well. Then, heat the milk mixture until warm, making sure not to let it boil.
Next, divide the milk into 3 portions, and slowly add the milk to the blended potato mixture. Remember to add a little salt as well.
Finally, strain the purple sweet potato milk mixture through a sieve until very smooth.

Steam the flan
Slowly pour the purple sweet potato milk mixture into each mold.
Then, place the molds into a steamer and steam over low heat for 30 minutes. During the steaming process, you must frequently open the lid to allow steam to escape so that the flan does not become pockmarked.
Finally, you can use a toothpick to test the flan; if it does not stick to the toothpick, it means the flan is cooked.
