What is all-purpose flour?
- All-purpose flour, also known as flour type 11, is an ingredient commonly used in baking recipes.
- Currently, all-purpose flour comes in two main types: bleached and unbleached. Bleached flour is the type that has had its natural yellow pigments removed, making it suitable for making bread or pastries.
- Flour is one of the most important ingredients in baking. It helps create structure and stability for baked goods.

What is dry yeast?
- Dry yeast is one of the types of leavening agents (Yeast), with coarse, large brown granules used to make dough rise and become fluffy, and has the ability to release substances that help the fermentation process of the dough go faster.
- To use dry yeast, you need to activate it first by soaking it in warm water, then mix that quality part with the dough.

How to make Donut using an air fryer

Activate the yeast
First, mix 120ml of warm water with 60ml of warm unsweetened milk in a measuring cup or glass.
Then, add about 6.5gr of dry yeast along with 21gr of granulated sugar to the milk mixture, use a whisk to stir well and let the yeast rest for about 5 – 10 minutes.
Note:
- The temperature of the milk to activate the yeast should range from 32 – 38 degrees Celsius (not exceeding 40 degrees Celsius), do not make it hotter as it will kill the yeast or weaken its activity.
- If you are using instant yeast, you can add it directly to the flour mixture.

Mixing and Proofing the Dough
You add the ingredients in order into the dough mixer: 60ml melted butter, 65gr granulated sugar, 1 chicken egg, 1 egg yolk, 1 teaspoon of vanilla extract, 1/2 teaspoon of salt, and 310gr all-purpose flour. Finally, pour the entire mixture of proofed dry yeast into the bowl of dough.
Next, you turn the machine on at low speed to mix and knead the dough for about 5 – 7 minutes, then gradually increase the speed and mix for another 5 minutes until it forms a cohesive dough that does not stick to the sides of the mixing bowl!
Tip:
- If you do not have a dough mixer, you can knead by hand using the Folding and Stretching technique. First, fold the dough over, then use the heel of your hand to press and stretch the dough away.
- With this technique, make sure to press and stretch the dough away, not down. Then rotate the dough 90 degrees and repeat the two steps for 15 – 20 minutes.
- When proofing the dough, you should place the bowl of dough inside the oven, as this will help the dough rise more evenly and puff up better!

Rolling the dough and shaping the cake
First, sprinkle some flour on the table, take the dough out of the bowl, and sprinkle a little more flour on top of the dough.
Next, use a rolling pin to roll the dough to a thickness of about 1/2 of a small finger.
Then, use a round mold to press firmly on the surface of the dough, gently twisting to cut the dough evenly.
After that, use a smaller round mold and place it in the center of the larger circle, pressing the mold down. Repeat this until the surface of the dough is covered.
Next, slowly tear off the excess dough around the larger circle and separate the smaller circle, placing both the larger and smaller circles onto a tray (lined with parchment paper).
As for the excess dough, knead it back together, roll it out again, and cut the cake as before. Finally, continue to let the dough rise for about 20 – 30 minutes before placing it in the air fryer.

Frying the donuts
Preheat the air fryer to 180 degrees Celsius for 3 minutes. Then, brush a thin layer of cooking oil around the inside of the fryer and place each donut in one by one, making sure they are not touching each other to allow space for the donuts to puff up while frying.
Lower the temperature to about 160 degrees Celsius and fry the donuts for about 5 – 6 minutes, then open the fryer and let the donuts sit inside for about 2 minutes before taking them out.
For the small round donuts, you should also fry them for 5 – 6 minutes until they are evenly golden.

Making the icing
To make the icing, put 250gr powdered sugar and 60ml of fresh milk in a bowl, add 1 tablespoon of corn syrup and 1 tablespoon of vanilla extract. Then, use a whisk to mix the mixture until it becomes thick and smooth, with no lumps of sugar.
Finally, dip one side of the donut into the icing and place the donut on a rack. For the small donuts, place them in the bowl of sugar, mix well, and use a fork to lift them out onto the tray, and you’re done.
