How to choose fresh and delicious anchovies

  • You should choose anchovies that are still fresh, with clear eyes, a moderate size of about 3 – 5 cm, and feel firm to the touch, as these are fresh anchovies.
  • You should avoid buying anchovies that are slimy, pale in color, or crushed, as they may have been stored for a long time and are no longer fresh.

  • Prepare the ingredients

    Wash the anchovies clean and let them drain so that they will be crispier when fried and won’t splatter oil.

    Peel the shallots and garlic, crush them, then finely chop them along with the chili.

    To make the fish sauce dip, combine chopped shallots, garlic, and chili with 2 spoons of fish sauce, 1 spoon of monosodium glutamate, and 1 spoon of sugar in a bowl, and stir well until the ingredients are blended.
