How to choose fresh and delicious anchovies

  • To make this dish, you should choose small anchovies for better flavor, as they have soft bones and do not require removing the heads.
  • Choose those with shiny skin, clear eyes that are not cloudy or watery.
  • To check the freshness of the fish, you can press it with your hand; if the flesh is still firm, then the fish is fresh, and you should buy it.
  • Avoid buying anchovies that are crushed, have bodies separated from the heads, or have a foul, spoiled smell.

Ingredients for sticky anchovy stew

  • Braised Fish

    After 30 minutes, place the fish pan on the stove, turn the heat to high, and when the fish pan boils, reduce the heat, and continue braising for an additional 10 minutes.

    After about 10 minutes, the fish sauce will gradually thicken, season to taste according to your family’s preference, then turn off the heat to finish.
