How to choose fresh, firm frogs
- You should choose live frogs instead of frozen ones to keep the dish’s characteristic flavor and nutritional content in the frog meat

- Avoid buying frogs that move slowly or have a swollen belly as these are usually farmed frogs, which will not have firm and tasty meat when cooked.
How to choose good tofu
- You should choose tofu that is off-white and has a faint characteristic smell of soybeans.
- Choose pieces of tofu that feel light when held, have good elasticity, a smooth surface, are not easily crumbled, and are not coarse.
- Avoid choosing tofu that has turned yellow and has a lime smell as this may indicate that the tofu has been stored for a long time or contains gypsum, which is not good for health.
How to choose fresh green bananas
- You should choose green bananas that are dark, fresh, with a smooth, shiny, and evenly curved peel.
- Choose green bananas that have small black spots on the peel and are turning slightly yellow as these are ripe bananas and will taste better.
- Avoid buying bananas that are light green, bruised, or small in size, and feel hard when touched as these bananas will taste very astringent.
How to choose fresh and delicious tomatoes
- Based on color: You should choose tomatoes that are bright red, evenly ripe, with skin that is not scratched and looks plump and appealing.
- Based on fragrance: Choose tomatoes that have a mild, natural fragrance; avoid those that have no smell or have an unusual sour odor.
- Additionally, you should select tomatoes that have fresh stems tightly attached to the fruit; when cut open, they should be juicy with yellow seeds.

How to prepare Frog Stewed with Banana and Tofu

Prepare and fry the frog meat
The frogs you purchase should be pre-processed; you only need to rub the frog meat thoroughly with the juice of 1/2 lemon and 1 tablespoon of salt for about 10 – 15 minutes, then rinse well. After that, cut the frog into 4 pieces.
Next, arrange the frog meat on the air fryer tray and brush an additional layer of cooking oil on the surface so that the frog meat does not dry out too much and has a crispy golden color at a temperature of 200 degrees Celsius for 15 minutes.

Prepare green bananas and tofu
Peel 6 green bananas and cut diagonally into thick slices about 1cm, then soak in a bowl of water mixed with 1 tablespoon of salt and the juice of 1/2 remaining lemon for about 10 – 15 minutes to prevent the bananas from browning.
Boil about 400ml of water on the stove, and when it boils, blanch the soaked green bananas for about 3 – 5 minutes, then remove the bananas and soak them in an ice water bowl to reduce the astringency when eaten.
Rinse 5 pieces of tofu briefly, then cut them into large cubes about the size of a finger joint. After that, fry the tofu using an air fryer at 200 degrees Celsius for about 10 minutes.

Cook the broth
Wash 2 pieces of fresh turmeric, peel 3 shallots, then put the shallots and fresh turmeric into a mortar and pound them finely.
Put a pot on the stove, heat 1 tablespoon of cooking oil over medium heat, then add the pounded shallots and fresh turmeric and stir briefly for about 3 minutes until fragrant.
Next, add the green bananas and stir-fry for about 5 minutes, seasoning with 1 teaspoon of fish sauce. Then pour the stir-fried green bananas onto a plate to set aside.
Continue using the pot that stir-fried the bananas, add the washed tomatoes cut into wedges and stir-fry for about 3 minutes until the tomatoes are soft, then pour in about 500ml of filtered water or bone broth and bring back to a boil over high heat.
Finally, add 1 tablespoon of fish sauce, 1/2 teaspoon of salt, and 2 tablespoons of fermented rice water to the broth and stir well.
