How to choose fresh and delicious chayote
- You should choose chayote that is medium-sized, light green in color, and feels firm and heavy when held.
- Choose chayote with green stems still attached tightly to the fruit, as this indicates it is fresh.
- Avoid chayote that has a chemical smell or is bruised and not intact.
How to prepare Stir-fried Chayote with Mushrooms

Prepare the ingredients
After buying chayote, peel it clean, then wash it thoroughly and cut it into thin strips, rinsing again to remove the sap and letting it drain.
Remove the stems from the mushrooms, wash them well, then soak them in diluted salt water for about 10 minutes. After that, wash the mushrooms again, drain them, and cut them into bite-sized pieces about the length of two finger joints.
Chop the green onions and cilantro, discarding the roots and any wilted leaves, then wash them with water and let them drain. Chop the green onion part finely, and for the green onion tops, pound them in a mortar with 1/2 teaspoon of ground pepper, using a pestle to crush them well.

Stir-fried Chayote with Mushrooms
You add 1 tablespoon of cooking oil into a pan and heat it on the stove over medium heat. When the oil is hot, add minced shallots and fry them until fragrant for about 1 minute, then add chopped mushrooms and stir-fry.
Add 1 tablespoon of oyster sauce, 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 3 tablespoons of water into the pan, and stir well for about 3 – 5 minutes until the mushrooms are cooked.
Next, add shredded chayote and stir-fry for about 4 – 6 minutes until the chayote is soft, then adjust the seasoning to taste.
Finally, add chopped green onions and 1/2 teaspoon of ground pepper, stir briefly, and turn off the stove.
