Blend the Watermelon
Put the scraped watermelon flesh into a blender to crush it (if you have a juicer, you can directly extract the juice).
Then, place the blended watermelon into a mesh bag to filter out the pulp and strain it through a sieve below. Squeeze it thoroughly to obtain the maximum amount of juice possible.

Cook the jam
Add 200g of sugar into the pot of watermelon water, then place it on the stove and simmer over medium heat. You can skim off the foam to make the watermelon water clearer.
When the water is slightly warm, add the prepared salt and stir well so that the salt and sugar completely dissolve in the watermelon water mixture.
Continue to cook over medium heat for about 35 minutes, stirring constantly until the mixture thickens, then turn off the heat to finish.
