1 What is lap xuong?
Lap xuong is a dish that originates from China. The main ingredients of this dish are lean meat and pork fat. To make lap xuong, people grind pork and fat into a paste and mix it with rice wine and sugar. Then, this mixture is stuffed into dried pig intestines to be cooked by natural fermentation.
There are two types of lap xuong on the market, dry lap xuong (which is sun-dried) and fresh lap xuong (not dried). Lap xuong has a pink or dark brown color, and when eaten, it has a natural sweetness combined with a bit of richness from the pork fat. This dish is often served with white rice, sticky rice, baguette, or rice paper.
2 List of specialty lap xuong types
Pork lap xuong
When it comes to delicious types of lap xuong, people immediately think of pork lap xuong, which is meticulously made from the selection of ingredients to the final product.
The ingredients are pieces of shoulder meat, ham, or tenderloin from freshly slaughtered pigs. The meat must be red, and the fat should be bright and fresh for the lap xuong to be delicious once finished. After selecting the meat, it is washed clean, chopped finely, and marinated with various spices.
Each place has its own marinating recipe to achieve a distinctive flavor. Many places also add a little white wine or mai que lo to make the meat ferment more naturally. After that, they stuff the mixture into pig intestines and dry them in the sun for about 3 rounds. Once dried, they are hung in the kitchen to be used gradually.
Pork sausage is a specialty of the Mekong Delta or a delicacy from the Northwest region with a version of smoked sausage.
Beef sausage
The land of Chau Doc is not only famous for thot not, rock sugar but the beef sausage here is also favored by many tourists. This dish originates from the Cham people – an ethnic group with a tradition of only eating beef, so they use beef to make sausage.
To make the best sausage, they select the finest cuts of beef such as thighs, shanks, lean meat… and wash them thoroughly with alcohol to remove any odors. Then they chop it finely, mix it with some spices like pepper, monosodium glutamate, sugar, along with traditional spices, and stuff everything into beef intestines. Locals say that the longer the sausage is dried, the better the taste.
After drying, the sausage is grilled over hot coals, releasing an enticing aroma. The hot sausage pieces absorb the rich flavor of beef fat, a slight sourness mingles with the spicy taste of pepper. All of this creates a unique and novel flavor that captivates everyone.
Duck Sausage
While Chau Doc has beef sausage that captivates many, Sóc Trăng also boasts its famous duck sausage or “lap vit”. This dish originates from Cambodia, later adapted by the people of Sóc Trăng to better suit the Vietnamese palate.
Duck sausage differs from regular sausage in that it is not stuffed into pig intestines but rather pressed from marinated duck meat and dried.
Lightly fried duck sausage on the stove gives you a delicious dish with a beautiful pink-red color. Duck sausage combines the rich flavor of duck meat with the deep sweetness of spices, creating an unforgettable taste for every diner.
Shrimp Sausage
The list of delicious sausages certainly cannot miss shrimp sausage from Can Giuoc – Long An. To make this sausage, large, fresh shrimp are selected, shelled, minced, and mixed with some traditional spices, five-spice powder, and Mai Que Lo wine.
After processing, shrimp sausage has a beautiful pink color and carries the natural sweetness of shrimp meat blended with the rich flavor of five-spice powder. Its unique flavor makes shrimp sausage a source of pride in the culinary culture of Can Giuoc – Long An.
Salted Egg Sausage
Unlike other types of sausages, salted egg sausage has a peculiar attraction due to the pink-red color of fresh meat, the fragrant aroma of specially brewed wine mixed with the golden richness of salted egg yolk.
When enjoying, you will immediately feel the softness of the meat, the light sweetness mixed with the salty, fatty flavor of the salted egg that melts in your mouth.
Because of its fresh and unique taste, salted egg sausage has gradually become popular, chosen by many people to enjoy or to give as gifts.
