How to prepare Fried Snakehead Fish with Lemongrass and Chili

Prepare the ingredients
The snakehead fish you buy should be cleaned, removing the scales and guts.
Next, soak it in diluted salt water for about 15 minutes, then take it out, wash it thoroughly with water, let it drain, and use a knife to make incisions on the fish’s body to help it absorb the seasoning better when frying.
Wash the lemongrass, and remove the stems from the chili. Then, finely chop the lemongrass and chili and place them in a bowl.
After that, use the mixture to marinate both sides of the snakehead fish with half of the chopped lemongrass and chili, and let it sit for about 15-20 minutes to absorb the seasoning.
Effective ways to remove the fishy smell from snakehead fish- Soak the fish in diluted salt water for about 5 minutes and then rinse it thoroughly with cold water to remove the fishy smell.
