Prepare the ingredients
First, with 500g of pork belly purchased, take a little salt and rub it all over the surface of the meat for 3 – 5 minutes, then rinse several times with clean water and let it drain.
At the same time, place a pot on the stove with 500ml of water and boil on high heat. Once the water boils, reduce to medium heat, then add the pork belly and boil for about 15 minutes, until the meat is tender, then turn off the heat and remove the meat to a plate.
Next, use a fork to gently poke the entire surface of the meat, then use your hands to evenly rub 1 teaspoon of lemon juice, 1 teaspoon of salt, and 2 tablespoons of batter for frying onto the pork belly.
Then, place the pork belly in a bowl with 1 teaspoon of salt and 1 teaspoon of seasoning powder, using a spoon to mix well.
Finally, add another tablespoon of batter for frying and mix well again, then let the meat absorb the seasoning for 5 minutes.
-
Fry the pork
Once the ingredients are prepared, place a pan on the stove with 300ml of cooking oil and heat it over medium heat. When the oil is bubbling, add all the marinated pork belly. To get the skin crispy and golden, you should fry the skin side first for about 5 – 7 minutes!
After that, continue frying the remaining surfaces until they turn golden and crispy for 10 – 15 minutes. Finally, turn off the heat and transfer the pork belly to a plate to drain the oil.

Finished Product
Fried pork belly with fish sauce has an eye-catching golden color and rich flavor. Each slice of pork belly is firm and sweet, seasoned perfectly with salt and sugar. Especially, the meat has just the right amount of lean and fat, so you can eat it indefinitely without feeling greasy.
How to choose fresh and delicious pork belly
- Delicious pork belly has a balanced ratio of fat and meat, which means you won’t feel greasy from too much fat or too dry from having too much lean meat when enjoying it.
- You should choose meat with a thick outer skin layer, a fat layer that is 1.5cm – 2cm thick, and lean meat tightly attached to the fatty part. However, to achieve the best taste, you should not buy meat with an excessively thick outer skin as that indicates it comes from an old pig, which will not taste good.
- Pay attention to the color of the pork; good pork belly has a dry outer skin that is red or bright pink. The meat after being cut should have a beautiful bright pink color, with soft, pinkish-white skin. The fat interspersed with the meat should be bright white.
- The elasticity of pork belly is very good, so you should check carefully before buying. Press the meat with your hand; if the indentation on the meat quickly returns to its original state, then that is good pork.
- Avoid choosing pork belly that has a pale color, overly soft texture, or has a slimy substance oozing out, as these are signs of spoiled meat that cannot be used.
Tips for making the dish correctly
- To ensure that the outer skin puffs up, and when frying the meat it becomes crispy without drying out, saving more time, you can boil the meat first with a little baking soda!
- To prevent oil from splattering while frying the meat, when the oil is hot, add a bit of salt to the pan before frying the meat. This method not only reduces splattering but also makes the pork skin crispier and tastier.
