  • Prepare the meat

    Massage the pork piece evenly with 1 tablespoon of salt for about 5 minutes. Then rinse with clean water and let it drain.

  • Prepare the other ingredients

    Peel the ginger, wash it clean, and slice it.

    Peel the shallots, wash them clean, slice 2 bulbs, and chop the rest finely.

  • Boil the meat

    Put a pot of water on the stove, add sliced ginger, 2 sliced shallots, and 1 teaspoon of salt, then boil the pork for 5 minutes.

    Take the pork out, use a knife to make several cuts on the skin, then let it drain. This method helps the skin to be crispy and puff up when fried.

  • Marinate the meat

    Put the boiled pork into a large bowl, add 1/2 tablespoon of seasoning, 1/2 teaspoon of sugar, 1/2 tablespoon of fish sauce, 1 teaspoon of minced shallot, garlic, and chili mixed together, and mix well.

    Marinate the meat for 20 minutes.

  • Coating the meat

    Put 3 tablespoons of crispy flour, 3 tablespoons of rice flour into a large plate and mix well.

    Note: Remember to remove the garlic, chili, and onion sticking to the piece of meat before coating it with flour, because it will burn easily when frying.

  • Fry the meat

    Place a pan on the stove, add 300ml of cooking oil and wait for the oil to heat up.

    Gradually add the coated meat into the pan and fry until the meat is evenly golden on both sides.

    Place a new pan on the stove with 2 tablespoons (30ml) of cooking oil, add the remaining garlic, chili, and shallots, and sauté until fragrant.

    Next, add 1.5 tablespoons of sugar and 1.5 tablespoons of fish sauce to the pan and stir well. Then, add the fried pork and stir evenly over the heat for 5 minutes to coat the meat with the sauce.

How to prepare Fried Pork Belly with Fish Sauce (recipe shared by a user)

  • Prepare the ingredients

    First, with 500g of pork belly purchased, take a little salt and rub it all over the surface of the meat for 3 – 5 minutes, then rinse several times with clean water and let it drain.

    At the same time, place a pot on the stove with 500ml of water and boil on high heat. Once the water boils, reduce to medium heat, then add the pork belly and boil for about 15 minutes, until the meat is tender, then turn off the heat and remove the meat to a plate.

    Next, use a fork to gently poke the entire surface of the meat, then use your hands to evenly rub 1 teaspoon of lemon juice, 1 teaspoon of salt, and 2 tablespoons of batter for frying onto the pork belly.

    Then, place the pork belly in a bowl with 1 teaspoon of salt and 1 teaspoon of seasoning powder, using a spoon to mix well.

    Finally, add another tablespoon of batter for frying and mix well again, then let the meat absorb the seasoning for 5 minutes.

  • How to make fish sauce braised pork

    Next, you heat another pan on the stove with 2 tablespoons (30ml) of cooking oil over medium heat. When the oil is hot, add 2 teaspoons of minced garlic, 2 teaspoons of minced shallots, and 1 teaspoon of minced chili to stir-fry until fragrant.

    Then, gradually add the seasonings including 2 tablespoons of water, 1.5 tablespoons of fish sauce, 2 tablespoons of sugar, and 1/2 tablespoon of monosodium glutamate, and use chopsticks to mix well.

    Once you see the seasonings have dissolved, continue to add all the fried pork belly, stirring continuously to ensure the pork belly is evenly soaked in the sauce, and braise for about 5 – 7 minutes.

    When the sauce has thickened, taste and adjust the seasoning as needed, turn off the heat, let the pork belly cool for about 5 minutes, then use a knife to slice it into thin pieces, and serve on a plate to finish.
