How to cook Kho quẹt

Prepare the ingredients
Soak the dried shrimp in hot water for 10 minutes until soft, then rinse with clean water and drain.
The pork belly should be rinsed with diluted salt water, then washed 2 – 3 times with water, and cut into small cubes.
Peel the red onion and chop finely. Remove the roots from the green onion, wash it clean, and cut it into small pieces. Remove the stems from the chili and wash it clean.

Make the fish sauce and fry the meat
Mix 8 tablespoons of fish sauce with 4 tablespoons of sugar and 4 tablespoons of water, stir well.
Add 1 tablespoon of cooking oil to the pan, turn on medium heat and add the pork belly to fry for about 5 – 6 minutes, until the meat renders all the fat, turns golden and crispy, then remove to drain.

Making kho quẹt
Add 3 tablespoons of cooking oil and pork belly into a clay pot, then add chopped shallots and sauté until fragrant.
When the shallots are fragrant, add dried shrimp, fried pork belly, and 1/2 teaspoon of seasoning powder, and stir-fry for about 2 minutes.
Pour the prepared fish sauce into the pot. Add 1 teaspoon of pepper and 2 chili peppers.

How to choose fresh and tasty pork fat
- You should choose pork fat that is about 1.5 – 2cm thick, opaque white in color, looking fresh.
- Choose a piece of fat that is dry, not slimy, feels firm to the touch, and has high elasticity.

Render fat and mix fish sauce
Pork fat bought to eliminate the odor, you rub it with salt until the salt is completely dissolved, then rinse the fat 2 – 3 times with clean water and cut into small cubes.
Put the pork fat into a pan, cook over medium heat for about 10 minutes to render the fat. Scoop out the rendered fat into a bowl separately, and the liquid fat into another bowl.
In a bowl, add 12 tablespoons of fish sauce, 6 tablespoons of sugar, 1 teaspoon of seasoning powder, 10 tablespoons of filtered water and stir well to dissolve the seasoning.
How to clean pork fat thoroughly, without odor:
- Mix a little water with 1 tablespoon of salt. Wait for the salt to dissolve completely in the water, then drop the pork fat in and soak for 25 minutes.
- You can add a few drops of lemon juice and a few slices of ginger to help eliminate the smell. Finally, scoop out the pork fat and rinse it thoroughly under running water.
