Ingredients for Mango Fish Sauce For 1 bowl
Green mango 1 fruit Lemon 2/3 fruit Orange chili 4 fruits Green chili 5 fruits Red chili 4 fruits Onion 2 bulbs Garlic 3 cloves Spring onion 2 strands Sugar 1 tablespoon Fish sauce 1 cup (100 ml)
How to choose good crunchy green mangoes
- Choose mangoes with a green skin that is not too dark and not too light, with a round waist that tapers toward the tail.
- To know if the mango is still fresh, just observe the stem. If the stem is slightly wet, fresh, and still has sap, that means the mango is fresh and just picked.
- Do not buy mangoes that feel soft when pressed; this indicates that the mango has been stored for too long or has overripe and is not tasty.
How to make Mango Fish Sauce
-
Prepare the ingredients
Remove the stems from the chili peppers, wash them clean, and then use a knife to chop them finely. Peel the shallots and garlic, then slice the shallots thinly and chop the garlic finely.
Trim the roots off the green onions, wash them under running water, then let them drain and chop them finely.
For the mango, use a double-edged knife to peel it clean and then rinse it briefly with water. After that, make several cuts on the surface of the mango with the knife, then proceed to cut it into thin strands.
-
Prepare the fish sauce
Put all the ingredients that were prepared earlier, including chili, shallots, garlic, and green onions into a bowl.
Then, add 1 tablespoon of sugar, 1 cup of fish sauce (about 100ml), and 200ml of cooled boiled water, then stir well until the sugar is completely dissolved.
Next, taste and adjust the seasoning to your liking and squeeze the juice of 2/3 of a lime into the bowl!
Finally, add the shredded green mango into the bowl, and it’s ready to dip with fried fish.
