How to make Peach soda panna cotta

  • Cook the milk mixture

    Place a pot on the stove, add 200gr of fresh milk, 200gr of fresh cream, and 35gr of sugar, and cook over medium heat. Cook until it starts to boil, then remove the pot from the heat, add 1/4 teaspoon of vanilla, and stir well.

    Tip: Do not let the milk mixture boil as it will cause the milk to curdle, making the dish less creamy.

  • Mix gelatin

    Take 10 grams of gelatin sheets and soak them in water to bloom. When the gelatin has bloomed, squeeze out the excess water and then add it to the milk mixture, stirring well to dissolve the gelatin.

    How to activate gelatin

    • If using gelatin powder, use 6 grams of gelatin powder + 250ml of liquid.
    • If using gelatin sheets, use 3 sheets of gelatin + 250ml of liquid.

  • Pour into the mold

    Use plastic wrap to tightly cover the bottom of the mold to prevent the milk from leaking out since this is a removable mold.

    Pour the cooked milk into the round mold, then place it in the refrigerator for about 1 hour.

  • Prepare the peaches

    After washing, use a knife to cut the peaches in half to remove the pit, then slice them thinly.

    How to prepare peaches to remove wax and pesticide residues:

    • Use salt to scrub the skin to remove the wax layer that preserves the outside of the peach.
    • Submerge the peaches in fruit juice and add 1 tablespoon of baking soda to help remove pesticide residues. Soak for 30 minutes, then rinse thoroughly with water.

  • Make the soda jelly mixture

    Put 30g of peach soda into a bowl, then add 6g of gelatin powder and stir well for the gelatin to bloom, then place it in the microwave for about 15 – 20 seconds to dissolve the gelatin.

    Next, add 170ml of peach soda to the melted gelatin and stir well to combine the ingredients. Wait for the bubbles to settle and then pour into molds.

  • Complete the dish

    Take the panna cotta mixture mold out of the refrigerator, evenly spread the sliced peaches in a clockwise direction into the mold, use a sieve, then pour half of the soda jelly mixture in, and then put it in the refrigerator for about 30 minutes.

    After 30 minutes, take the mold out and add the remaining soda mixture (strain through a sieve for a smooth mixture) and then place it in the fridge for 2 hours.

    You can remove the mold by using a cloth soaked in hot water, wringing it out, wrapping it around the mold for about 1 minute to easily lift the mold out.

Soaked peaches 500 gr Peach tea bags 1 pack (about 5gr) Soaked peach juice 50 ml Sweetened fresh milk 300 gr Whipping cream 300 gr Gelatin powder 27 gr Sugar 80 gr American orange 1 fruit (zest only)

  • Brew the tea

    Put 1 tea bag into a cup with 300ml of boiling water, use a spoon to press down to extract all the tea essence. Steep the tea for 3 – 4 minutes then remove the tea bag to avoid bitterness.

    Soak 6 sheets of gelatin (about 12g) in water for the gelatin to soften, then squeeze out excess water.

    Place a pot on the stove, add the peach tea and bring to a boil, then turn off the heat, add 30g of sugar and stir well.

    Add the soaked gelatin and squeeze out excess water, then stir until dissolved and let it cool.

    Tip: To prevent the jelly from forming a layer on the surface as it cools, stir occasionally to avoid a film forming.

  • Pour into molds

    The soaked peaches should be halved when taken out of the can, then arranged in the mold, pouring the cooled jelly mixture over them until the jelly fully covers the surface of the peaches.

    Place the mixture in the refrigerator for about 1 – 2 hours.

  • Cook the milk mixture

    Grate the peel of 1 American orange, to avoid bitterness do not grate the white pith of the orange.

    Soak 8 sheets of gelatin in water to soften.

    Place a pot on the stove, gradually add 300g of whipping cream, 300g of fresh milk, grated orange peel, and 50g of sugar, then heat over medium heat until just about to boil, then add the drained gelatin, stirring until completely dissolved.

    Once the gelatin has dissolved, let it cool, then gently pour it into the set peach jelly mold and place it in the refrigerator for about 4 hours.

    Tip: Avoid boiling the milk over high heat as it will cause the milk and cream to separate.

    After the mixture has completely set, take it out of the refrigerator. Dip the mold in hot water for about 8 – 10 seconds, then use a cutting board to press against the mold’s surface and invert the mold to release the panna cotta.

    Tip: Do not dip the mold in boiling water for too long, as it will cause the panna cotta to melt.
