Dried squid 2 pieces Fresh bamboo shoots 0.5 kg (boiled) Chili 2 pieces Shallots 2 bulbs (minced) Green onions 2 stalks Common seasoning a little (sugar/ monosodium glutamate/ seasoning powder) Fish sauce 1/2 tablespoon Cooking oil 4 tablespoons

How to Choose Fresh Bamboo Shoots

  • When buying bamboo shoots, to select fresh ones, you should choose shoots that are coarse in shape, with thick and uniform segments, a surface without spots, thin skin, and not wilted.
  • Avoid choosing bamboo shoots that are too white or have a yellow-brown color; when touched, they should not be sticky and should have visible veins.

How to prepare Dried Squid Stir-fried with Fresh Bamboo Shoots

  • Prepare the ingredients

    Use a knife to cut the dried squid into small pieces about 1/2 finger thick. Then soak in clean water for about 1 – 2 hours before cooking to soften the squid. Next, take the dried squid out and let it drain.

    Fresh bamboo shoots should be torn into strands by hand or cut into thin slices with a knife.

    Boil the bamboo shoots in boiling water several times, and each time you boil, rinse with clean water until the bamboo shoots are soft and less bitter, then take them out to drain.

  • Stir-fried Dried Squid

    Place a pan on the stove, add 2 tablespoons of cooking oil, and wait for the oil to heat up. Then add 1 shallot, peeled and finely chopped, and sauté until fragrant.

    Next, add the prepared squid to the pan along with 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, and 1/2 teaspoon of sugar, then stir-fry until the squid firms up, then set aside in a bowl.

    Add another 2 tablespoons of cooking oil to the pan and sauté 1 finely chopped shallot until fragrant. Then add the prepared fresh bamboo shoots along with 1/2 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1/2 teaspoon of sugar, and 1/2 tablespoon of fish sauce, and stir well for about 3 minutes to let the bamboo shoots absorb the flavor.

    Proceed to add the previously stir-fried squid and mix the ingredients together, then add 2 chili peppers and 2 chopped green onions.

    Stir well until the ingredients are combined, then taste and adjust the seasoning to your liking, turn off the heat, and serve the dish on a plate.
