- You should choose fresh pork pieces that have a bright color, with the fat having a slightly translucent white color. Avoid selecting meat that has unusual colors, is pale, or too dark.
- Good meat should not have any strange odors when sniffed. Pieces of meat that have strange, fishy, or spoiled smells are either spoiled or not stored under proper conditions.
- Pressing on the piece of meat with your hand should feel firm, not too hard, and not mushy, with no slimy liquid oozing out, then it can be chosen for purchase.

How to prepare Grilled Pork Spring Rolls with Rice Vermicelli

Prepare and marinate the meat
Marinate the ground pork with a spice mixture including: 1 spoon of ground pepper, 1 teaspoon of sesame, 1 tablespoon of corn starch, 1.5 tablespoons of sugar, 1 teaspoon of five-spice powder, 1/2 teaspoon of salt, 1/2 tablespoon of fried onion, and 1 teaspoon of monosodium glutamate.
Use a fork, chopsticks, or wear plastic gloves to mix the above mixture thoroughly for about 5 minutes, then place it in the refrigerator for about 10 – 15 minutes to let the ground pork absorb the spices evenly.

Prepare the remaining ingredients
Fresh lemongrass should be washed clean, removing the outer layer, then smash the top part and cut off some of the stalk so that you have pieces of lemongrass about a hand’s length.
Green onions should have their roots cut off, wilted leaves discarded, then wash thoroughly and let them drain.
Wash the fresh vegetables, hot peppers, lime, cucumber and fresh lemongrass directly under clean running water, then soak in 1 tablespoon of diluted salt for about 15 minutes before removing them to a basket to drain.
Note: You should dry the lemongrass so that during the making of the spring rolls, the meat can stick to the lemongrass without falling off.Place a pan on the stove and heat 100ml of cooking oil over high heat. Once the oil is hot and small bubbles appear, add 2 tablespoons of red cashew nuts and stir for 3 – 5 minutes to extract cashew oil for the dish.

Shape the sausage
You take the marinated meat mixture and wrap it around the top of the lemongrass stalk, then squeeze it tightly. To ensure the meat cooks evenly and doesn’t burn while grilling, you should take a moderate amount of meat for each lemongrass stalk.
Note: To prevent the meat from sticking too much to your hands while making the sausage, you should apply a little cooking oil to your hands before wrapping the meat. -
Grill the sausage
First, you need to heat the charcoal by directly heating it with a gas stove or a blowtorch. When the charcoal is properly red, place it in the grill box and put the grill rack on for about 5 minutes to heat up.
Place the sausage on the grill rack, and to prevent the sausage from drying out while grilling and to achieve a beautiful reddish-yellow color in the final product, you should brush a bit of annatto oil evenly over the sausage while grilling.
Note: Since the sausage contains sweetness from sugar, you should turn the sausage regularly to avoid burning. -

Chop the green onions and then place a pan on the stove to heat 100ml of cooking oil. When the oil is hot, add the chopped green onions and stir for 2 minutes, then turn off the heat and transfer to a bowl to cool.
Thinly slice the fresh herbs, basil, and cucumber, then place them on a plate along with the Banh Hoi and grilled spring rolls. Sprinkle a little roasted peanuts, 2 tablespoons of fried onions, and drizzle the green onion oil you just made on top to make the dish more appealing.
Remove the stems from the chili peppers and place them in a small bowl, then squeeze in the juice of 1 lime and add 1 tablespoon of lime sugar, stirring well until the sugar dissolves to create a perfect bowl of sweet and sour dipping sauce that is extremely simple.
