Pork sausage 200 gr Ground pork 550 gr Pork fat 100 gr Pork liver 50 gr Shrimp 4 pieces (medium size) Sticky rice 100 gr Cornstarch 2 tablespoons Roasted peanuts a little Rice paper 200 gr (1 pack) Fresh lemongrass 500 gr (10 – 15 stalks) Minced garlic 2 teaspoons Minced shallots 2 teaspoons Soy sauce 1 teaspoon Oyster sauce 2 teaspoons Annatto oil 3 teaspoons Fish sauce 2.5 tablespoons Cooking oil 300 ml Common spices a little (salt/ ground pepper/ sugar)

  • You should choose fresh pork pieces that have a bright color, with the fat being a translucent white with a slight ivory tint. Avoid choosing pieces with unusual colors, pale or overly dark shades.

  • Prepare and marinate the pork

    Wash the pork fat with diluted salt water, then rinse it with warm water and let it drain, then cut the meat into small cubes.

    Tips to eliminate the smell of pork

    • Method 1: To make the pork fragrant and eliminate the smell after processing, blanch the meat in boiling water for about 3 minutes, then rinse the meat with cold water.
    • Method 2: To remove the smell, soak the pork in warm water mixed with coarse salt for about 10 minutes, then rinse with clean water.
    • Method 3: To effectively eliminate the smell of the meat, you can add a little white wine during the blanching process.

    Next, add 500g of ground pork, 100g of diced pork fat, and 200g of pork sausage into a bowl and marinate with a seasoning mixture including: 2 tablespoons of tapioca starch, 1 teaspoon of sugar, 2 teaspoons of oyster sauce, 1 teaspoon of fish sauce, 1 teaspoon of minced garlic, 1 teaspoon of minced shallots, 1 teaspoon of ground pepper, and 2 teaspoons of annatto oil.

    Mix the ingredients together until smooth and sticky. Then let the mixture rest for 60 minutes to allow the meat to absorb the seasoning.

  • Grilling the spring rolls

    Fresh lemongrass you bought should be washed clean, remove the outer layer, then crush the top part, and cut off the tips to have pieces of lemongrass about the length of a hand. You can replace fresh lemongrass with bamboo skewers.

    Next, take the marinated meat mixture and wrap it around the top part of the lemongrass. Use a moderate amount of meat for each lemongrass stick so that when grilling, the meat cooks evenly and does not burn.

    Then, place the spring rolls in the air fryer and grill at 180 degrees Celsius for 10 minutes. After 10 minutes, open the fryer to check and flip the spring rolls for even cooking, then continue grilling at 180 degrees Celsius for another 3 – 5 minutes until the spring rolls are cooked.

  • Make the dipping sauce

    After purchasing the shrimp, wash them with clean water, then peel the shells, remove the intestines and discard the heads, then chop them finely along with 50g of pork and 50g of pork liver.

    Soak 100g of glutinous rice overnight, then put the rice into a pot and cook for about 10 – 15 minutes until the porridge is soft, then transfer it to a blender to puree.

    Next, add the remaining chopped shallots and garlic into a pan with 1 teaspoon of annatto oil and sauté until fragrant, then add the shrimp, pork, and pork liver and stir-fry for about 3 – 5 minutes until the pork liver is just cooked.

    After stir-frying, place the mixture into a blender and blend for about 3 minutes, then turn on the stove again and add the pureed glutinous rice porridge into the pan. Season the mixture with 2 tablespoons of fish sauce, 1 teaspoon of soy sauce, and 1.5 teaspoons of sugar. Cook the sauce over medium heat until it thickens to the desired consistency.

    You should prepare a bit of scallion oil, fried shallots, and roasted peanuts to add to the dipping sauce when serving.

    To make crispy pancakes to eat with nem, roll the rice paper into a shape like a cigarette, wet the rice paper so that it doesn’t burst when rolling, then fry it in 300ml of cooking oil over medium heat until it turns golden brown.

    After completing the above steps, place the grilled nem on a plate along with dipping sauce. Grilled nem can be served with green bananas, bean sprouts, pineapple, and fresh herbs or eaten with fresh vermicelli or wrapped in rice paper with cucumber, mango, or radish, all of which are very delicious.
