Making chocolate sponge cake
Separate 2 egg yolks and egg whites into 2 separate bowls.
Sift 30gr of flour, 10gr of cornstarch, and 5gr of cocoa powder into a new bowl, then mix well.
Then, add 2 egg yolks, 1 teaspoon of vanilla, 20ml of oil, 20ml of unsweetened fresh milk, and 1/4 teaspoon of salt. Mix well until the mixture is smooth, without lumps or granules.
Add 1/2 teaspoon of cream of tartar to the egg whites, whisking on low speed until the eggs form tiny bubbles like soap. Next, gradually add 20gr of sugar into the bowl, continue whisking the eggs at medium speed until the egg whites are stiff and form sharp peaks, then stop.
Tip: To whisk the eggs well, make sure that they are free from any impurities such as: grease, egg yolks,…!Take 1/4 of the whipped egg whites and add it to the flour mixture, gently fold in one direction to combine. Then, pour this mixture back into the remaining whipped egg whites.
Use a spatula to gently fold the mixture from the bottom up. Bring the spatula down to the bottom of the bowl, lift the heavy ingredients up, and push them to the side. Continue this process until the mixture is well combined.

Baking the cake
Preheat the oven to 170 degrees Celsius, 2 heat, for 10 minutes (turn on the fan if available).
Pour the flan mixture into the mold. Next, gently pour the sponge cake batter over the flan layer. Since the sponge cake layer is lighter, the batter will float on top of the flan layer.
Prepare a tall tray, line it with a thick towel, and place the cake mold on top. Pour boiling water into the tray until it is nearly submerged, then place the tray in the oven. Bake at 170 degrees Celsius for 60 minutes.
Tip: After the baking time, use a toothpick to poke the cake to check if it is done. If the toothpick comes out dry and not sticky with wet batter, the cake is done.Remove the cake, let it cool, then place the cake mold in the refrigerator for 3-4 hours.
Finally, use a knife to cut around the edges of the mold to separate the cake. Pour out any excess syrup so that the sponge cake does not get wet. Invert the mold to release the cake.

Making flan cake
Next, add 300ml of fresh milk, 100ml of fresh cream, and 50gr of sugar into a new pot. Place the pot on the stove and stir evenly over low heat until the sugar dissolves and the milk is warmed but not boiling.
In a bowl, add 2 eggs, 2 egg yolks, 1/2 teaspoon of vanilla extract, and 1/8 teaspoon of salt, and gently whisk the mixture until the eggs are blended, but do not create too many bubbles as it will affect the flan’s texture.
Then, gradually pour the warm milk mixture into the egg mixture and stir well. Finally, strain the mixture through a sieve twice to remove any residue.
Tip: To prevent the eggs from cooking, make sure to slowly add the milk, and avoid pouring a large amount in at once. -
Making the cake
Separate 3 egg yolks and 3 egg whites into 2 separate large bowls.
In the bowl with the egg yolks, add 50gr of sugar, 1/2 teaspoon of vanilla essence, 10ml of fresh milk, 10ml of olive oil, and mix well. Next, add 40gr of flour and 15gr of cocoa powder and continue to mix until the mixture is smooth.
In the bowl with the egg whites, add 1/8 teaspoon of salt and use a mixer to beat the eggs until they form tiny bubbles like soap. Then, add 1 teaspoon of lemon juice, 50gr of sugar, and continue to beat until the sugar is dissolved, and the eggs are soft and fluffy, forming stiff peaks that droop slightly.
Next, divide the whipped egg whites into 2 portions, adding each portion to the yolk mixture, and gently fold in one direction to combine.

Pouring the flan cake mixture into the mold
Pour the flan mixture into the mold that has the pre-prepared caramel, then skim off any bubbles to prevent the cake from being uneven. Next, gently pour the cake batter on top, ensuring the mixtures do not mix together.
Tip: The cake batter must float on top of the flan mixture to be successful; it should not mix into the flan. -
Steam the chocolate flan cake
Arrange the cake molds in the steamer, place the steamer over a pot of boiling water, then cover tightly and steam on low heat for about 45 minutes, opening the lid every 10 minutes to release some steam.
Tip: When steaming, remember to cover the pot with a cloth to prevent water from dripping onto the cake. Additionally, to check if the cake is done, you can poke a toothpick into the cake; if you pull it out and it doesn’t stick with batter, the cake is done. -
Final product
The chocolate sponge flan cake, also known as chocolate flan gato, has a fluffy cake base with a nutty, slightly bitter, and mildly sweet cocoa flavor.
When eaten with the smooth, rich flan layer combined with the sweet, fragrant caramel sauce, it brings users multiple layers of appealing flavors.
How to choose fresh and delicious chicken eggs
- Eggshell: You should choose eggs with a thin white powdery layer on the outside, and when touched, they feel rough or heavy because these are fresh eggs. If the eggshell is smooth and shiny, or has cracks, it means the eggs have been stored for a long time and are not fresh.
- Shine a light: When shining a light on chicken eggs, if you see a small air cell, a round yolk that does not move, and a clear white that is orange-red or pale pink, these are fresh eggs. Conversely, old eggs will have a red color with many moving veins surrounding a large air cell.
- Shake gently: Hold the egg up to your ear and shake gently; if you hear a noise, it is an old egg that has been stored for a long time. If there is no sound but you can feel strong movement when shaking, it is a rotten egg, and the hen is in the process of incubating.
How to choose pure cocoa powder
- Pure cocoa powder has a bright brown color, uniform color without white spots, does not have mold or foreign substances mixed in.
- Standard cocoa will have a bitter taste, slightly fatty, and if you taste it carefully, you will sense a very light sourness in the aftertaste.
- When smelling, you will perceive a slightly strong but pleasant aroma, not harsh or with any strange chemical smell.
- You can easily find cocoa powder at supermarkets, convenience stores, or stores selling mixing ingredients. Be sure to read the information on the packaging regarding the origin, ingredients, and expiration date of the product.
- You should avoid choosing cocoa types with chocolate, vanilla, or unusually fragrant smells as these are ones that have added synthetic flavors.
- You can find cocoa powder at the TasteVN supermarket system nationwide or buy online at bachhoaxanh.com.
What is all-purpose flour? Suggestions on where to buy
- All-purpose flour (or flour number 11) is a type of flour with a high protein content of about 11.5 – 12% and is commonly used for making chewy cakes such as bread, pillow cake, or pizza. The high protein content in the flour works well with yeast to create the chewiness of the cake when completed.
