Making caramel
Place a pan on the stove, add 60g of sugar, a little water, and 1 teaspoon of lemon juice.
Stir well over low heat until the sugar completely dissolves. When the sugar starts to boil, shake the pan until the mixture turns a brown color, then turn off the heat.
Note:
- You don’t need to add too much water, just enough to dampen the sugar.
- Once the caramel is done, quickly pour a thin layer into each mold. Avoid leaving it too long as caramel can harden easily when cooled.

Mix the egg and milk mixture
Put 3 eggs, 3 egg yolks, 400ml of fresh milk, and 120ml of condensed milk into a bowl, and use a whisk to mix well in one direction until the mixture is combined.

Sift the milk mixture
Strain the milk mixture through a sieve for smoothness.

Pouring and Baking the Cake
Preheat the air fryer for 10 minutes at 110 degrees Celsius.
Pour the mixture into each cake mold, then bake for 35 minutes at 110 degrees Celsius.
Finally, place the flan in the refrigerator for at least 4 hours before serving.
Note: To check if the cake is cooked, you can use a toothpick to poke into the cake and then pull it out. If the toothpick comes out clean, it means the cake is done; if there is a sticky mixture on it, the cake is not cooked yet. -

Tips for Successful Execution
- When beating the egg and milk mixture, you should not beat too hard to avoid creating air bubbles.
- You should only stir the mixture in a certain direction and sift the mixture before steaming.
- Do not steam the cake at too high a temperature, as this will cause the egg and milk mixture to boil over and become pockmarked.
- If steaming the cake with a steamer, use a towel that absorbs water well, cover the pot’s mouth, and then cover it with a lid. Every 15 minutes, open the lid once and wipe off the steam.
- If steaming the cake in the oven, you should preheat the oven for 15 minutes at a temperature of 150 – 160 degrees Celsius. Place a towel in the baking tray before putting the cake mold in the tray. Then pour boiling water to cover about 1/2 of the mold before baking.
Tips for Cake Preservation
- Flan can be used for 7 – 10 days if stored properly.
- Do not place it near raw foods with a fishy smell, such as meat and fish, as the cake will easily absorb the odor and spoil quickly.
- It is advisable to keep the cake in a closed container and store it in the refrigerator. Avoid temperatures that are too low, as this will cause the cake to dry out and become crumbly.
- Do not store the cake at room temperature, as it is very easy to spoil.
