Ingredients for Braised Spanish Mackerel with Pepper Serves 4 people

Spanish mackerel 400 grams Garlic 3 cloves Chili 3 pieces Fish sauce color 1 teaspoon Cooking oil 1 tablespoon Fish sauce 1 tablespoon Common spices a little (Ground pepper/ salt/ sugar/ seasoning powder/ monosodium glutamate)

How to choose fresh and delicious Spanish mackerel

  • You should choose fish with clear, bright eyes, wet skin, and shiny scales.
  • When buying Spanish mackerel, you should select fish that are small in size, without any unpleasant smell, and when you touch it, the flesh should be resilient and not sink in.
  • To buy the freshest Spanish mackerel, you should go to the market early in the morning as this is when the fish have just been caught and are very fresh.

How to make Braised Needlefish

  • Prepare the needlefish

    To save time on preparing the fish, when buying, ask the seller to clean and cut it into bite-sized pieces, about 1/2 finger thick.

    After buying the needlefish, rinse it with water and soak it in saltwater for about 5 minutes. Then, rinse it again with clean water and let it drain.

    Ways to prepare needlefish without a fishy smell

    • Method 1: Rub salt on the fish body, then proceed to clean the fish. After that, rinse thoroughly with water several times and let it drain.
    • Method 2: Mix a few tablespoons of alcohol or white vinegar into the water when rinsing the fish, then soak the fish in that mixture for about 5 minutes. Afterward, rinse it clean.
    • Method 3: Squeeze lemon juice into warm water and soak the fish for 5 – 7 minutes, then rinse with water to eliminate the fishy smell.

    Peel the garlic, rinse it briefly with water, then put it in a mortar to pound or chop finely with a knife. For the chili, remove the stem and wash it clean while keeping it whole.

  • Marinate the mackerel

    Put the fish in a small pot, marinated with a mixture of spices including: 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, 1 teaspoon of ground pepper, 1 teaspoon of dark soy sauce.

    Then gently stir and let it sit for about 10 minutes for the fish to absorb the spices and evenly color.

  • Fish Stewing

    Place a pot on the stove, add 1 tablespoon of cooking oil to the pot, and heat over medium flame. Wait for the oil to get hot, then add minced garlic and sauté until fragrant and golden, then add the marinated fish to the pot and stir briefly.

    Next, add enough water to the pot to just cover the fish, turn the heat up high, and cover the pot, waiting for it to boil for about 3 minutes, then reduce the heat to low so the fish cooks and absorbs the seasoning evenly.

    Then, add 3 chili peppers to the pot for extra spiciness and aroma. Finally, adjust the seasoning to taste, let it simmer for another 3 minutes on low heat, then turn off the stove, plate it, and enjoy.
