  • First, you need to pay attention to the color. The color of good meat is bright pink, not too red and not too pale. Pork that is pale, has a greenish tint, and smells bad is spoiled, and you should not choose this type of meat.
  • Pork that is firm and elastic is good meat. You can test it by pressing your finger into the meat; if it bounces back immediately, is not slimy, and does not leak juice or liquid, it is fine.
  • When making braised dishes, you should choose pork belly, lean shoulder, or loin because when braised, the meat will be softer and more delicious, not dry or greasy.

  • Prepare and marinate pork

    For pork, to remove dirt and odor, scrub it well with salt, then rinse with cold water and let it drain. Use a knife to cut the meat into bite-sized pieces.

    How to eliminate the odor of pork

    • To completely remove the odor of pork, before preparing the dish, briefly dip the meat in boiling water for about 2 minutes, then take it out and rinse with cold water.
    • Another useful tip is to add a bit of white wine to the water used for blanching the pork. The alcohol effectively eliminates odors.
    • Use lemon, vinegar, salt, or ginger to rub on the pork and let it sit for about 5 – 10 minutes, then rinse with water.

  • Marinate the pork

    Add 1/2 tablespoon of monosodium glutamate, 1 tablespoon of ground pepper, 1/2 tablespoon of seasoning powder, 1/3 amount of minced garlic, and all the sliced shallots, 1 tablespoon of sugar into the pork, then mix well.

    Dissolve 1/2 tablespoon of caramel color with 50ml of water (about 1/2 cup) and then add it to the bowl of meat. Proceed to marinate the meat for at least 30 minutes to 1 hour to let the meat absorb the flavors and achieve a beautiful color.

    After the meat has absorbed the seasonings, take the meat out, and keep the marinade in the bowl.

    Tip: If you have time, it’s best to marinate the meat overnight in the refrigerator to make the braised pork more flavorful.

  • Meat Braising

    Place a pan on the stove, add 1 tablespoon of cooking oil and heat it up, then add the remaining minced garlic to sauté until fragrant.

    When the garlic is aromatic, immediately add the marinated pork and stir-fry over medium heat until the meat is cooked and firm.

    Next, pour the marinade into the pan, reduce the heat, and continue to braise the meat until the sauce thickens and reduces, then turn off the heat.

    Transfer the braised pork with pepper to a plate, sprinkle some chopped chili and scallions on top, and garnish for a beautiful presentation to finish.

    Transfer the braised pork with pepper to a plate, sprinkle some chopped chili and scallions on top, and garnish for a beautiful presentation to finish.

How to preserve dishes

  • To better preserve stewed meat, after cooking, you should skim off excess fat that sticks to the surface of the meat.
  • Each day when eating, you should scoop out just enough for your meal and reheat separately; if there are leftovers, you should not pour the remaining meat juice back into the main pot as this can easily cause the meat to spoil.
  • You should not cover the pot too tightly as this will cause the food to stew and may spoil easily.
  • Every day, you need to reheat the pot of meat once and keep it in a dry and ventilated place.
  • If storing in the refrigerator, you should cover the pot tightly, either using cling film or placing it in a container with a tight lid before putting it in the fridge. When eating, you should scoop out just enough to reheat separately. Note that storing meat in the refrigerator should only be done for a maximum of 2 – 3 days to ensure the best quality and flavor of the dish!
