How to choose carrots
- Choose carrots that are bright in color, still firm, have smooth skin, deep orange color, green tops and leaves, and are not bruised. Carrots with the tops still attached will retain their flavor and freshness longer.
- Avoid carrots that have spots or cracks, wilted tops, or green ends.
How to choose wood ear mushrooms: Choose mushrooms with large caps; the thicker the ear, the crunchier and tastier they will be. Do not choose mushrooms that are moldy or crumbled.

Prepare the ingredients
Carrots, onions, scallions, and shallots are cleaned and chopped finely.
Wood ear mushrooms are soaked in water until soft, stems are removed, drained, and chopped finely.
Tips for properly soaking dried wood ear mushrooms:
- Before soaking the wood ear mushrooms, you should rinse them in cold water to remove sand and dirt.
- Soak the dried wood ear mushrooms for about 3 – 4 hours until they are soft, avoiding soaking too long or leaving them overnight, as this can produce harmful toxins in the mushrooms, which are bad for health.
- Do not use hot water to soak the mushrooms to make them expand quickly. Although the mushrooms expand faster in cold water, the morpholine in the mushrooms does not have enough time to neutralize, which is not safe.

Mix the filling
In a bowl, add 300g of minced pork, 100g of raw pork sausage, 50g of carrots, 50g of onions, 5g of scallions, 5g of shallots, 5g of minced garlic, 5g of wood ear mushrooms, 1/5 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of sugar, 1/2 teaspoon of oyster sauce, 1/2 teaspoon of fish sauce, 1/4 teaspoon of pepper, and 1 teaspoon of sesame oil.
Mix well until the mixture is combined.

Wrapping the spring rolls
You place a piece of rice paper underneath, then add another 1/4 piece of rice paper on top as shown.
Scoop a little filling into the middle, then you tightly gather the spring roll to prevent the filling from spilling out and use a green onion to tie it securely.
Tip:
- Make sure to put just the right amount of filling to make it easier to tie!
- However, don’t put too little filling, as the spring rolls won’t be plump and will look less appealing.

Frying the spring rolls
Heat a pan or pot on the stove, add enough oil to submerge the spring rolls for even and delicious frying.
When the oil is hot, dip the top part of the spring roll to make it evenly golden, then place the bottom part (with filling) that has been rolled into the oil and fry over medium-low heat until all sides are golden, then remove and let drain the oil.

Tips for using leftover cooking oil

- Let the cooking oil cool down completely. Place a strainer over a glass bowl. You can also line it with a piece of paper towel to ensure no residue remains, helping to clean the oil and making it safer for the next use.
- Wait for the oil to filter clean; if you are meticulous, you can filter it multiple times before pouring the oil into a jar, sealing it tightly, and storing it in a cool place.
