    Add lotus stem, carrot, and chili into a large bowl, then pour 1/3 of the dressing over it and mix well.

    Next, add the chicken and Vietnamese balm along with the remaining dressing into the bowl and stir well. You can season it more to taste.

    Finally, transfer everything to a plate and sprinkle fried shallots and peanuts on top to finish.
