Peel the lotus stem, wash it clean, cut it into pieces about 2 finger lengths, and split it in half.
To keep the lotus stem white, soak it in cold water mixed with lemon juice for about 15 – 20 minutes. After that, remove it and let it drain, squeezing out the water.
