How to choose fresh ingredients
How to choose fresh chives
- You should choose chives that are still young, with bright colors, and are easy to break when pinched with your hand.
- Do not buy old chives, which are dark green as they have a lot of fibers, making them tough and not delicious, or chives that have turned yellow and show signs of rot.
How to choose papaya.
- Choose elongated papayas that feel heavy in your hand, with the stem not yet dried out, as this indicates a good papaya.
- To have a crispy and delicious papaya salad, choose papayas with a green, shiny skin, and the tip of the papaya not yet turned yellow.
- Do not choose papayas that have turned yellow, with white spots on the outer skin, and feel soft when pressed, as this indicates they are ripe and not suitable for making salad.
How to prepare Fried Chive Cake
-
Prepare the vegetables
Remove any wilted leaves from the chives you bought, wash them clean and let them drain, then cut them into pieces about 1 finger length and place them in a separate bowl.
Wash the papaya, peel it, remove the seeds, and then shred it into the bowl.
Wash the carrot, peel it, and then shred it to add to the bowl with the papaya.
-
Make the dipping sauce
Put 2 tablespoons of soy sauce, 2 teaspoons of sugar, and 3 teaspoons of warm water into a bowl and stir until the sugar is completely dissolved. You can adjust the seasoning to taste.
-
Mix the batter
Add 250g of rice flour and 35g of crispy frying flour into a pan and mix well, then add 500ml of filtered water and stir until the batter is combined.
Tip: To make the cake taste better and avoid the smell of rice flour, soak the batter mixture for about 15 – 20 minutes before cooking.
-
Stir the batter
After soaking, use a sieve to filter the batter mixture until smooth.
Place the batter pan on the stove over medium heat, stirring continuously until the batter mixture thickens and becomes transparent, then turn off the heat.
-
Mixing the dough
Place the chopped chives on a flat surface, then put the cooked dough mixture on top.
Use your hands to knead the chives and the dough mixture until they are well combined.
-
Shaping the cakes
Shape the dough into flat, round pieces that are easy to eat. To achieve a nice shape, you can use a metal or plastic mold for the cakes.
-
Frying the cakes
Place a pan on the stove, add 6 tablespoons of cooking oil to the pan, and when the oil is hot, add about 6 – 8 cakes to fry until golden and crispy on both sides, then add 2 eggs to fry together, you can fry the eggs until fully cooked or runny depending on your preference. Fry similarly for the remaining portions.
Tip
- You can adjust the amount of cakes and eggs according to your preference and portion size each time you fry.
- You can substitute chicken eggs with duck eggs based on your preference.
-
Completion
Place the fried chive cakes on a plate, add a little shredded papaya and carrot on top, serve with soy sauce, and if you can handle the heat, add a bit of chili sauce or whole chilies into the soy sauce to enhance the dipping sauce flavor.
