  • Choose elongated papayas that feel heavy in your hand, with the stem not yet dried out, as this indicates a good papaya.
  • To have a crispy and delicious papaya salad, choose papayas with a green, shiny skin, and the tip of the papaya not yet turned yellow.
  • Do not choose papayas that have turned yellow, with white spots on the outer skin, and feel soft when pressed, as this indicates they are ripe and not suitable for making salad.

    Remove any wilted leaves from the chives you bought, wash them clean and let them drain, then cut them into pieces about 1 finger length and place them in a separate bowl.

    Wash the papaya, peel it, remove the seeds, and then shred it into the bowl.

    Wash the carrot, peel it, and then shred it to add to the bowl with the papaya.

  • Make the dipping sauce

    Put 2 tablespoons of soy sauce, 2 teaspoons of sugar, and 3 teaspoons of warm water into a bowl and stir until the sugar is completely dissolved. You can adjust the seasoning to taste.

    Add 250g of rice flour and 35g of crispy frying flour into a pan and mix well, then add 500ml of filtered water and stir until the batter is combined.

    Shape the dough into flat, round pieces that are easy to eat. To achieve a nice shape, you can use a metal or plastic mold for the cakes.

    Place a pan on the stove, add 6 tablespoons of cooking oil to the pan, and when the oil is hot, add about 6 – 8 cakes to fry until golden and crispy on both sides, then add 2 eggs to fry together, you can fry the eggs until fully cooked or runny depending on your preference. Fry similarly for the remaining portions.
