- For live chickens: Choose chickens with shiny feathers, looking healthy, moving actively, with a bright red comb that is not bruised or purple. Do not buy chickens with ruffled feathers, looking lethargic, with a runny nose and beak, or with a foul smell.
How to choose fresh young mustard greens
- You should buy mustard greens that are bright green in color, thick leaves, feel heavy in hand, soft leaves but with crunchy stems that are easy to break; these are young greens that will be softer and sweeter when eaten.
- You should not buy greens with yellowing leaves, signs of insect damage, or greens that have bolted, as these are older greens that will be tough and bitter.

Prepare the ingredients
To remove the odor and clean the chicken, rub the chicken well with salt, rinse thoroughly, then cut into bite-sized pieces.

Discard the wilted leaves of the mustard greens, then wash them thoroughly and soak in a diluted salt water solution for about 10 minutes. Next, lift the greens out, cut them into bite-sized pieces, and drain.
Peel the ginger, wash it clean, and crush it.

Marinate the chicken
Put the chicken into a bowl and mix well with 3 teaspoons of seasoning, 1 teaspoon of ground pepper, 1 teaspoon of monosodium glutamate, and 1 tablespoon of fish sauce.

Next, add 1.5 liters of filtered water, boil on medium heat for about 10 minutes, at this point, add the remaining 25ml of white wine, smashed ginger, and season with about 2 teaspoons of sugar, 2 teaspoons of seasoning, taste to adjust, then add the green mustard and cook for another 5 minutes until the mustard is soft.
Note: Using white wine helps make the soup more fragrant, however, you can skip this ingredient if you don’t like it or are cooking for children. -
