- For shelled scallops, choose those that are firm and slightly translucent.
- Do not buy scallops if you see the meat is leaking, soft, or has a foul smell.

Cook rice on the stove
Add 100g of rice into a pot, rinse the rice under clean water 2 – 3 times. Then add about 2 liters of water to the pot, bring to a boil over medium heat for about 30 – 40 minutes until the rice is soft.

Prepare the ingredients
Use a knife to cut the scallops into bite-sized pieces, then soak them in a little diluted saltwater for 20 minutes.
After that, rinse the scallops several times with clean water, squeezing them gently to remove the saltwater absorbed by the scallops, preventing them from becoming salty. Place the scallops in a colander to drain.
To save time, you can buy pre-shelled scallops; wash them thoroughly with clean water about 2 – 3 times, then place them in a colander to drain.
Remove the roots, the outer shell, and any yellow or damaged leaves of the cilantro, cut the green onion tops and leaves separately, then chop everything finely.

While processing the scallops and mushrooms, the porridge will also be cooked. Wait for the porridge to boil for an additional 3 – 4 minutes, season with the mixture of spices including: 2 tablespoons of seasoning, 3 teaspoons of sugar, 2 teaspoons of monosodium glutamate, stir well and let the porridge boil for another 5 – 7 minutes, adjust the seasoning to taste, then turn off the heat.
