  • For scallops in their shells, choose those with intact shells that are not cracked. Observe that the shell is slightly closed but not completely sealed; when you touch it, if the shell closes tightly again, the scallop is still alive and fresh.
  • For shelled scallops, choose those that are firm and slightly translucent.
  • Do not buy scallops if you see the meat is leaking, soft, or has a foul smell.

  • Delicious chicken thigh mushrooms have fresh colors, about the length of a hand, with a characteristic aroma similar to almonds.
  • If the mushrooms still have a thin layer of fuzz on top of the cap, the stem is uniformly white, and they feel firm when held, they are fresh and just harvested.
  • Avoid choosing mushrooms that are too long as they may be hollow inside. Additionally, do not select mushrooms that look dull, have a foul smell, or are soft and mushy.

  • Cook rice on the stove

    Add 100g of rice into a pot, rinse the rice under clean water 2 – 3 times. Then add about 2 liters of water to the pot, bring to a boil over medium heat for about 30 – 40 minutes until the rice is soft.

  • Prepare the ingredients

    Use a knife to cut the scallops into bite-sized pieces, then soak them in a little diluted saltwater for 20 minutes.

    After that, rinse the scallops several times with clean water, squeezing them gently to remove the saltwater absorbed by the scallops, preventing them from becoming salty. Place the scallops in a colander to drain.

    To save time, you can buy pre-shelled scallops; wash them thoroughly with clean water about 2 – 3 times, then place them in a colander to drain.

    Remove the roots, the outer shell, and any yellow or damaged leaves of the cilantro, cut the green onion tops and leaves separately, then chop everything finely.

  • Sauté scallops

    Add about 1 tablespoon of cooking oil to the pan and heat over medium heat. Wait for the oil to boil and have small bubbles forming, then add 1/2 of the chopped green onion.

    When the onion becomes fragrant, add the scallops, stirring for 5 – 7 minutes until the scallop meat tightens, then turn off the stove. Next, add the sautéed scallops to the porridge and stir well.

  • Sauté chicken thigh mushrooms

    Similar to sautéing scallops, add 1 tablespoon of cooking oil to the same pan, heat over medium heat and add the remaining 1/2 of the chopped green onion, stirring for 1 – 2 minutes before adding the mushrooms. Stir well, and when the mushrooms tighten, add them to the porridge and stir well.

  • Cook the porridge

    While processing the scallops and mushrooms, the porridge will also be cooked. Wait for the porridge to boil for an additional 3 – 4 minutes, season with the mixture of spices including: 2 tablespoons of seasoning, 3 teaspoons of sugar, 2 teaspoons of monosodium glutamate, stir well and let the porridge boil for another 5 – 7 minutes, adjust the seasoning to taste, then turn off the heat.

    Scoop the porridge into a bowl, add chopped green onions and a little ground pepper to finish.
