How to make Fried fish cake with fish sauce

Prepare the ingredients
Wash the cilantro thoroughly, then remove the roots and finely chop the stems and leaves.
Similarly, for the green onions, after washing, finely chop the leaves, and cut the root part into small pieces about 1 cm long.

Marinate the fish cake
You put the fish cake into a bowl and then add all the chopped cilantro along with 1/2 of the chopped green onions, 1/2 of the minced shallots, and 1/3 of the minced garlic and chili.
Next, you season with 1/2 teaspoon of pepper, then mix well; the more you knead, the firmer and tastier the fish cake will be.
Tip:
- After kneading, you can use a wooden stick to pound the fish cake or hit the fish cake hard against the table to make it firmer and tastier.
- To keep the fish cake fresh and firm when frying, you should always store the fish cake in the refrigerator, and when kneading, the fish cake should still be cold; if left at room temperature for too long, the fish cake will easily become crumbly.

Fried Fish Cake
You place the fish cake on a piece of parchment paper, then use another piece of parchment paper to press down on top, spreading the fish cake evenly to about 1cm thick, then you cut off the edges of the parchment paper.
Next, you heat a pan on the stove with plenty of oil to prepare for deep frying the fish cake, turn the heat to high until the oil is hot, then add the fish cake and the parchment paper to fry.
When the fish cake firms up and turns a light yellow, use tongs to remove the parchment paper from the surface of the fish cake.
Continue frying the fish cake over medium heat until both sides are golden brown and fragrant, then remove and let it drain from the oil.
Tip:

You heat a pan on the stove, add 1 tablespoon of cooking oil, then add the remaining garlic, chili, and shallots to sauté until fragrant.
Once the garlic and shallots are fragrant, add the green onions and fish cake, season with 1.5 tablespoons of fish sauce, 1 tablespoon of sugar, 1/4 teaspoon of MSG, and 1 tablespoon of chili sauce.
Simmer the fish on low heat, stirring continuously until the sauce thickens and is absorbed evenly into the fish cake, then add the chopped green onions, stir well, and turn off the heat to finish!
