Prepare the Ingredients
Dried lotus seeds should be soaked in water for 30 – 45 minutes before cooking.
Then place the lotus seeds in the steamer for 20 minutes, until the seeds are just cooked, then transfer to a bowl.
Small tip:- To save time, you can use fresh lotus seeds for cooking and skip the soaking step.
- If you do not have a steamer, you can boil the lotus seeds instead of steaming them.
Peel the lychee and split the flesh in half or leave it whole according to your preference, but remember to remove the lychee seed.
Wash the pandan leaves clean and tie them into a bundle.
-
Cooking the dessert
Put 1 liter of water into a pot, turn on medium heat to boil the water, then add 300g of rock sugar and stir with a spoon until the sugar dissolves.
Add lotus seeds and pandan leaves to cook together for a more fragrant dessert, cook for an additional 10 minutes, then add all the lychee flesh and cook for another 5 minutes before turning off the heat.
Tips for clearer dessert water
- Remember to skim off the foam while cooking the dessert.

How to choose fresh and delicious ingredients
How to choose fresh litchi
- You should choose litchi that is just ripe, with a reddish-pink outer skin, smooth spines, and fine veins because these are delicious, very sweet litchis. Avoid buying litchis with sharp spines or green skin as these are immature litchis.
- Choose litchi that feels elastic when you touch it; the skin should not be too hard or too soft.
- Prioritize litchi that is still in clusters, with fresh leaves, tightly attached to the branch, and hard to separate, as these are freshly picked litchis.
- Fresh litchi has a light, characteristic fragrance of ripe litchi. The good flesh will be clear, juicy, thick, and sweet.
- Do not buy litchi if you see them with black skin, spots, or if they are rotten, fermented, or leaking juice.
How to choose delicious lotus seeds
- For fresh lotus seeds, you should choose seeds that have just been harvested. Fresh lotus seeds will have a creamy white or deep yellow color, and they will be plump and round on the outside.
- Additionally, you should choose lotus seeds that have not been shelled, as they will be fresher and tastier.
- For dried lotus seeds, you should buy dried seeds that are opaque white, small, and uniform in size. Usually, dried lotus seeds will not have the lotus heart.
- Limit choosing lotus seeds that have a musty smell or have tiny specks on the surface, as those have been stored for too long and are no longer usable.
Lychee lotus seed soup is cooked simply but is a very nutritious dessert. When you eat it, the crunchy and sweet lychee combines with the buttery lotus seeds inside, and a little cool water will make you feel truly refreshed on these hot summer days!
