- Avoid purchasing beef shanks that have unnatural meat color, appear pale, feel slimy on the outside, and have white spots inside.
How to choose crunchy, delicious green papaya
- The best crunchy and delicious green papaya is the duck-billed variety, which has two different skins with an outer peel that is yellow with tiny green spots.
- Good green papayas will have a shiny green skin, feel heavy in hand, sturdy, and have a lot of white latex oozing from the stem, indicating that the papaya is freshly harvested, making it fresher and tastier.
- Limit purchasing papayas on rainy days or a few days before, as they will not be sweet and crunchy anymore.
How to cook Braised Beef Trotters with Papaya

Prepare the ingredients
Papaya should be peeled, washed, and cut into small pieces about 2 finger lengths long.
Green onions should be peeled, washed, cut in half at the ends and the leaves, then chopped into small pieces.
Chili peppers should be washed, the stems removed, and sliced. Cilantro should have the roots removed, washed, drained, and chopped finely. Garlic, after being peeled, should be crushed and chopped small.
Lemongrass should only be peeled, washed, and 1/3 of it should be chopped finely while the rest should be cut into sections. Ginger should be peeled and sliced.

Boil the beef trotters
To make it faster, you should ask the seller to use a blowtorch to remove the hair and chop it small for you. When you get home, you just need to eliminate the odor of the beef trotters by doing the following.
Place a pot on the stove, add 250ml of water into the pot, and boil over medium heat until the water in the pot boils, then add 1.5 teaspoons of salt, 1 sliced piece of ginger, and half of the chopped lemongrass.
Boil over medium heat for about 3 minutes until the water in the pot boils, then add the chopped beef trotters. Blanch for about 3 minutes to firm up the trotters.
Turn off the heat, transfer the blanched trotters to a bowl, wash them thoroughly with water, and use a knife to scrape off any remaining dirt on the trotters’ skin. Rinse again with clean water and drain.

Marinate the beef leg
Put the drained beef leg with 1 spoon of seasoning, 1 teaspoon of MSG, 1.5 teaspoons of salt, 1 tablespoon of fish sauce, and 1/2 teaspoon of ground pepper into the pot.
Mix well and marinate for about 15 – 30 minutes for the ingredients to soak into the beef leg.

Stewed Pork Leg
Place a pot on the gas stove, add 1 tablespoon of cooking oil along with all the chopped lemongrass, green onions, and garlic. Sauté evenly over medium heat for about 2 minutes until the ingredients become fragrant.
Add all the marinated beef legs, stir well for about 1 minute, then turn off the heat. Cover the pot and let it sit for about 5 minutes for the spices to soak into the beef legs.
After resting, open the lid and add 800ml of filtered water along with the chopped lemongrass. Turn the heat on, cover the pot again, and stew over medium heat for about 1 hour until the beef legs are tender, then add all the chopped papaya.
Continue to stew for another 5 minutes until the papaya is soft, then season to taste. Finally, add chopped green onions and cilantro, then turn off the heat.
Finally, ladle the stewed beef leg soup into a bowl, garnish with some sliced chili to enhance the flavor and color of the dish, and you can enjoy it!
