How to make Braised Beef Legs with Lemongrass

Prepare the beef legs
First, the beef legs you bought should be held over the stove on low heat for about 2 – 3 minutes, until the skin tightens slightly and emits a fragrant aroma, then turn off the stove.
Next, use a knife to scrape the skin evenly to remove any remaining dirt. Then rinse several times with clean water, drain, and cut into bite-sized pieces.

Prepare other ingredients
The beef shank you bought should be rinsed briefly with water, then use a clean damp cloth to gently dab the surface of the meat. Next, use a knife to cut it into thin slices suitable for eating.
For the onion and shallots, peel off the skin. After that, take 1 onion and slice it thinly, while the remaining one should be lightly roasted on the stove over low heat for 3 minutes, until it releases a fragrant aroma.
As for the scallions, coriander, and Vietnamese balm, remove the roots, wash them clean, let them drain, and then cut them into sections with a knife.
Finally, ginger should be rinsed briefly with water to clean it, then along with lemongrass, use a knife to smash them.

Boil the beef shank
After preparing the ingredients, place a pot on the stove with 2 liters of water, 1 smashed ginger, and 1 tablespoon of salt, and boil on high heat for about 10 minutes.
When the water boils, reduce to medium heat and add all the prepared beef shank, then boil for 20 – 30 minutes. After that, turn off the heat and remove the beef shank to a bowl.

Prepare the broth
Next, place another pot on the stove with 6 liters of water, 2 liters of fresh coconut water, 8 smashed lemongrass stalks, 1 onion, and 100g of roasted shallots, and cook over medium heat for about 10 minutes.

Stew the beef feet
When the broth starts to simmer, add all the boiled beef feet, 200g of rock sugar, 4.5 tablespoons of seasoning, 3.5 tablespoons of monosodium glutamate, and 1.5 tablespoons of salt, and continue to stew over medium heat for 30 minutes.
Then, add 3 white radishes that have been cut into pieces, and continue to stew for another 30 – 60 minutes.
