How to choose fresh beef tendon

  • When buying beef tendon, if looking with the naked eye, you should choose those that are pinkish-white.
  • You should choose beef tendon with a strong, characteristic smell, as this indicates fresh tendon.
  • Do not choose beef tendon that is pale white, green, or leaking yellow fluid, as this indicates it is no longer fresh and has been treated with chemicals.
  • Do not choose beef tendon that smells bad or has no smell. A bad smell indicates it is old and not fresh, while no smell indicates it has been chemically treated.

How to choose fresh daikon radish

  • Fresh daikon radish should be elongated, of moderate size, with smooth skin, without bruises or cracks, and the tops should be fresh and green. When holding it, it should feel heavy and firm.
  • Do not choose overly large radishes, those with bruises, cracks, bad smells, wrinkled skin, or dull colors, as these indicate the radish has been stored for too long and is not fresh.

How to Cook Beef Tendon with Lemongrass

  • Prepare the beef tendon

    Wash the beef tendon thoroughly, remove the odor by soaking it in diluted saltwater for 2 – 3 minutes, then take it out, drain, and cut into square pieces about the thickness of a finger joint.

    To further eliminate the smell of the beef tendon, add crushed lemongrass for marinating.

    Ways to Remove the Smell from Beef Tendon

    • Method 1: Rub the beef tendon with a bit of salt for about 5 minutes, then wash it thoroughly with water, and cut it into small pieces.
    • Method 2: Use a little white alcohol to rub the beef tendon for about 5 minutes, then rinse with water.
    • Method 3: Use a piece of crushed ginger, rub it evenly over the beef tendon, then wash with water.

  • Prepare other ingredients

    Wash the white radish, peel it, and cut it into bite-sized pieces.

    Pick the leaves and young tips of the basil, wash them, and let them drain. Cut the green onions into bite-sized pieces.

    Put a pot on the stove and add 2 tablespoons of cooking oil. Add chopped green onions and sauté until fragrant.

    Then, add the beef tendon and stir-fry briefly until it firms up, then pour in the water from 1 coconut and bring to a boil.

    When the beef tendon pot is boiling, add the radish and 2 teaspoons of salt, then stew until soft. Stew the beef tendon for about 45 – 50 minutes on low heat until the tendon is tender.

    After the beef tendon is cooked, adjust the seasoning to taste, then turn off the heat and ladle into a bowl, garnishing with a bit of basil on top.

    Tip:
    • To avoid breaking the radish during cooking, you should remove the radish after it has softened, then continue to stew the beef tendon.
    • The way to test the doneness of the radish is very simple; use chopsticks or a sharp stick to pierce through the radish; if the chopsticks go through easily, the radish is done.
    • Additionally, you can shorten the stewing time of the beef tendon by using a pressure cooker for cooking.
