How to choose fresh, meaty crab
- You should choose large ones with firm meat, especially those that are still carrying eggs; this type usually tastes more fragrant and rich when eaten.
- You can try bending the claws of the crab; if the meat is plump and white, fresh-looking and not turning brown or hollow, then the crab is fresh and delicious.
- The best time to buy crab is during the rainy season (around the 8th to 10th lunar month), so you should purchase crab on these days for better cooking results.
- Female crabs are tastier than male crabs because they usually have more roe; you can tell by looking at the belly, as female crabs will have a larger and broader area underneath.
How to choose fresh, juicy lemons
- Lemons with smooth, shiny skin that are not rough or lumpy will have a higher vitamin content compared to others.
- Choose lemons that are of moderate size but heavy; heavier lemons will contain more juice, be fresher, and of better quality.
- Select lemons that are bright green, with thin and fresh skin, and show no signs of mold.
- Avoid buying lemons that are dark green or have yellow spots on the skin, as these are usually older lemons, and the juice may be sour.
How to prepare mixed Ba khía

Prepare the ingredients
After purchasing Ba khía, soak it in hot water for 5 – 10 minutes to reduce the saltiness, then discard the soaking water.
Squeeze about 100ml of lemon juice, and strain out the lemon seeds. Peel the garlic and then mince it together with the chili until very fine.
Tip:- To prevent the Ba khía from having a strong garlic smell when eating, make sure to mince the garlic very finely before mixing.
- Ba khía will absorb the sour and spicy flavors more quickly if you mince the chili instead of chopping it; if you can’t handle too much spice, reduce the amount of chili!

Separate Ba khía
After soaking the Ba khía, proceed to separate it into a bowl, first remove the shell on the back and discard the lower part of the abdomen.
Next, separate the claws of the Ba khía into smaller pieces.
Tip for a more flavorful mixed Ba khía
- Instead of discarding the shell, if you find Ba khía shells with roe, use chopsticks to retrieve the orange roe and add it to the Ba khía bowl before discarding the shell.
- You can put the chili, garlic, and sugar into a mortar to pound instead of chopping.

Mixing the crab
Add 4 tablespoons of sugar, 1/2 teaspoon of monosodium glutamate, freshly squeezed lime juice, minced chili, and garlic (or put them in a blender) into a bowl.
Use a spoon to mix everything together until the sugar mixture thickens.
Add all the separated crabs into the sugar mixture, and mix well so that the mixture absorbs into the crabs.
It is recommended to let it marinate for 30 – 45 minutes or overnight for better flavor, because the crabs just mixed will not have evenly absorbed the seasoning yet.
