How to Prepare Grilled Snakehead Fish with Satay

  • Prepare the Snakehead Fish

    Use a sharp object to hold the head of the snakehead fish in place, then use a knife to cut open the belly and remove all the entrails of the fish.

    Next, use a filleting knife to remove the slimy skin of the fish. Depending on the dish and the size of the fish, you will cut it into bite-sized pieces. Additionally, you can buy pre-prepared frozen snakehead fish, which still retains its flavor and freshness. This is the easiest way as you won’t have to spend time preparing the snakehead fish. Once you buy it, just chop it up, season it, and it can be cooked right away.

    How to Clean the Fish Properly, Removing the Sliminess

    • Method 1: You can pour vinegar over the fish’s body, wait a few minutes for the slime to solidify, then you can easily scrape off the solidified slime with a knife.
    • Method 2: After buying the fish, pour hot water over the fish’s body. Be careful not to use boiling water as it will cause the skin to peel and cook the outer layer of the fish. After pouring, wait for the slime to solidify, then scrape it off with a knife and rinse thoroughly. To ensure the fish is clean of slime, after scraping, you should also rinse with vinegar or lemon.

    Note: To eliminate the slime and fishy smell due to residual secretions left when you process the fish, after handling the meat, you should wash it thoroughly, especially the belly and backbone of the fish to remove any remaining blood. By doing this, your fish will significantly reduce its fishy smell!

  • Marinate the Fish

    Put the fish in a bowl with 1 tablespoon of chili, 20g of lime leaves, 2 teaspoons of minced shallots, and 2 tablespoons of satay. Use your hands to mix well so that the fish absorbs the spices evenly, then marinate for 15 minutes.

  • Grill the Fish

    Place the fish on an electric grill or on a charcoal grill, grill until the fish is just cooked through, do not overcook it to avoid drying the fish, which would take away the deliciousness of the dish.

What is Hagfish?

Hagfish is the name of a new fish species that is currently trending in Vietnam. Hagfish (primarily called in the North) is also known as Ninja Fish (as referred to in the North) and Head-Showing Tail Fish (name used in the Central region). In English, Hagfish is called Hagfish. Hagfish is a fish species with smooth skin, averaging 300 – 500g per fish, approximately 40 cm long. The head of the fish resembles an eel, with short whiskers. They are very strange animals, having one skull and two brains. This type of fish has no jaws, no backbone, only soft cartilage running through the middle of the body. They are blind and usually feed at night.

Hagfish has many health benefits, effective for people suffering from headaches, stomach bleeding, poor physical condition, leucorrhea, and has effects on skin beauty. Vitamin E – a typical nutrient of hagfish, is over 200 times more than that of beef.
Vitamin A is six times more than that found in regular fish. Therefore, this fish is also good for people with osteoporosis and children, those with poor health, and those who sweat a lot at night.
