How to choose fresh, firm crabs
- First, you should observe the color of the silk skin between the elbow joint on the crab claw; crabs with a lot of meat will usually have a pink-red or dark pink color. Moreover, closely observe this part; fresh crabs will have a certain shine.
- Touch the crab’s belly; if it feels firm and the belly is large, then it is a meaty crab. Additionally, squeeze the upper part of the swimming legs; if the crab struggles vigorously, it is fresh and has good meat.
- You should not choose crabs with soft shells because the meat and roe will not be good. Also, do not choose crabs that no longer move as they may be dead, and the crab meat will not be fresh anymore.

Clean and boil the crab
Put the crabs you bought into a basin, fill with water to cover the crabs. Then, add ice cubes and soak for 20 – 30 minutes.
While soaking the crabs in ice water, remove the ties from the crabs, use a toothbrush to scrub the top, bottom, and between the crab legs to remove any algae stuck on them.
Place a pot on the stove, turn on medium heat, add 300ml of water and bring to a boil. Once boiling, add the crabs and boil for about 5 – 7 minutes, then remove and let cool. Separate the crab shell, belly, and cut the crab in half or leave it whole if desired.

Stir well then squeeze the juice of 1/2 an orange into it, continue to cook for another 2 minutes until the sauce thickens a bit, then adjust the seasoning to taste.
