  • You should choose long pig tails with a lot of skin, bright color, and pinkish hue.

  • Pressing with your hand should feel firm, without any foul smell.

  • Avoid buying very small pig tails as they will have less meat and skin, and taste less good.

How to choose fragrant lotus seeds

  • You should choose full lotus seeds, with a white color slightly turning yellow, about half the size of your finger joint.

  • For dried lotus seeds, you should buy from reputable places such as markets or large supermarkets, paying close attention to the expiration date, clear origin, and no signs of mold.
  • If using fresh lotus seeds, choose those that still release a little water when you press them with your finger.

  • Do not buy lotus seeds that are blackened, have wrinkled outer skins, and do not choose seeds that are wet as they will easily turn dark and wilt quickly.

How to prepare Pork Tail Stewed with Lotus Seeds

  • Prepare and Marinate the Pork Tail

    You prepare a basin of water, add a little salt, and squeeze in the juice of 1/2 lemon. Then, you put the pork tail in, using 1/2 of the lemon after squeezing to rub on the skin of the pork, and soak the pork tail in the salt and lemon mixture for about 10 minutes.

    Next, use a knife to scrape the surface of the pork skin clean, then rinse the pork tail with water several times and let it drain.

    You chop the pork tail into bite-sized pieces and place them in a bowl to marinate with 2 teaspoons of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 tablespoon of caramel sauce, then mix well and marinate for 30 minutes to absorb the seasoning.

    How to clean the pork tail, no foul smell

    • You can use white alcohol, ginger, salt, lemon, or vinegar to rub on the pork tail and let it sit for 5 – 10 minutes before rinsing it clean with water.

    • While marinating the pork tail, you can roast a shallot, peel it, crush it, and add it to the meat to help effectively eliminate the foul smell.

    • Blanch the pork tail in boiling water with smashed ginger, shallots, and salt, which also helps clean and effectively remove the foul smell.

  • Prepare the lotus seeds

    Dry lotus seeds bought should be rinsed once with water and then soaked in water for 3 – 4 hours until soft, then drained.

    Tip: If using fresh lotus seeds, there’s no need to soak them; just rinse them briefly with water and let them drain.

  • Sauté the pork tail

    Place a pan on the stove, add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add minced onion and sauté until fragrant.

    Once the onion is fragrant, add the pork tail and stir-fry over high heat for about 5 minutes until the skin is firm, then turn off the heat.

  • Stewing the dish

    Place a pot on the stove, add the sautéed pig tail into the pot. Next, add enough water to cover the pig tail and turn the heat to medium, stewing for about 1 hour.

    When the water in the pot boils, use a ladle to skim off the foam, then reduce the heat to low and continue stewing.

    After about 1 hour of stewing, the water in the pot has reduced, then add the lotus seeds and pour in more water to completely cover the pig tail, and stew for another hour. Finally, adjust the seasoning to taste, turn off the heat, and serve in a bowl to enjoy immediately.
