How to choose delicious and quality beef

  • Good beef is characterized by bright red meat, fine and smooth fibers, with a layer of fat that is light yellow and slightly firm.
  • You should choose pieces of meat that have a certain elasticity when pressed with your hand, with no unpleasant smell or excessive moisture.
  • Avoid buying pieces of beef that are dark red, with large fibers and deep yellow fat. This is meat from older cows, which will be tough when cooked and not tasty.
  • You should buy whole pieces of beef and then chop or grind it at home, which is safer than buying pre-ground beef.

  • Choose tomatoes with smooth, shiny skin, bright red color, and even coloring as these are usually ripe and juicy.
  • Tomatoes that still have green stems attached to the top are often freshly picked, resulting in a sweeter and crunchier taste.
  • Avoid tomatoes with wrinkled skin or those that feel soft and mushy when gently pressed, as these are often overripe or have been harvested for a long time.

How to make Spaghetti sausage skewers

  • Prepare the ingredients

    Wash the beef, chop it finely, marinate with 1 tablespoon of oyster sauce and 1/2 teaspoon of ground pepper, mix well and let the beef absorb the seasoning for 10 minutes.

    Wash the German sausage (you can replace it with regular sausage, but it may break easily when boiled) and cut into round slices about 1/2 finger width.

    Peel the onion, wash it, and cut it into small cubes. Chop the tomatoes finely or blend them in a blender until smooth.

    Tip: To make the tomato sauce smoother, you can blanch the tomatoes for 3 – 5 minutes over high heat, then peel the skin off before blending until smooth.

  • Skewer spaghetti onto the sausage

    If you prefer shorter spaghetti, you can break the strands in half as shown in the picture, otherwise, just keep the normal length!

    Hold one end of the spaghetti strand right in the middle of the sausage and skewer through, continuing until you use up 60g of spaghetti.

    The remaining 60g will be left whole and boiled as usual to avoid skewering too much sausage, which can be overwhelming.

  • Boil Pasta

    Place a pot on the stove, add about 700ml of water along with 1 tablespoon of cooking oil and 1 teaspoon of salt.

    When the water starts to boil, add all the pasta, reduce to medium heat when the pasta touches the water and becomes soft, then use your hand to press all the pasta down into the water.

    Tip: To ensure the pasta cooks evenly, if you have time, you should boil the pasta with sausages separately from the regular pasta, as the sausage will change the cooking time compared to the pasta without sausage.

    Stir the pasta well and continue to cook over medium heat for about 10 minutes, then turn off the heat and let it sit for about 3 minutes. After that, drain the boiled pasta in a colander to remove excess water, and it’s done.

    How to boil pasta deliciously, fluffy without sticking:
    • To make the pasta fluffier and tastier, add oil and salt to the boiling water.
    • To check if the pasta is cooked, take out a piece of pasta, break it with your hand; if the inside of the pasta still has a lot of white, cloudy color, it means the pasta is not cooked yet.
    • To make the pasta more delicious after cooking, ensure that the inside of the pasta has about a matchstick tip of cloudy white left.

  • Make spaghetti with sausage and tomato sauce

    Place a pan on the stove over medium heat, add 3 tablespoons of cooking oil and wait for the oil to heat up before adding the diced onion to sauté until fragrant.

    Next, add all the blended tomatoes, stir-fry for about 3 minutes, then add about 1 cup of water (rice bowl size) into the tomato pan.

    When the tomato mixture begins to boil, add the minced beef and stir well for about 3 minutes, seasoning with 1.5 teaspoons of seasoning powder, 1 tablespoon of sugar, and 1 teaspoon of salt.

    Stir until the seasoning dissolves evenly, adjust the taste to your liking, and continue to simmer until the tomato mixture thickens, then turn off the heat.

    With the spaghetti sausage, when eating, you should put the spaghetti on the plate first, then pour the minced beef tomato sauce on top, sprinkle a little ground pepper for aroma, mix well and it’s ready to enjoy.
