How to choose fresh and delicious ingredients
How to choose good dried bamboo shoots
- You should buy bamboo shoots that are light yellow, interspersed with amber color and have a slight shine. Good bamboo shoots will have a relatively uniform color, little fiber, and the closer you get to the tip, the tastier it will be, as the tip is younger and softer than the base.
- You should choose pig tongue bamboo shoots (which are shaped like a pig’s tongue), of moderate size, which will be tender and will save you time when simmering.
- Avoid buying dried bamboo shoots with mold spots, black dots, that feel moist and chewy when touched, and have an unpleasant, musty smell when sniffed.
How to choose good dried shiitake mushrooms
- You should choose mushrooms of moderate size. The mushroom caps should be whole, not broken or cracked.
- Good mushrooms will have a characteristic bright brown cap.
- Do not buy mushrooms that are moldy, old, broken into pieces, or have strange, unusual colors.
How to choose fresh and delicious carrots
- You should buy carrots of moderate size, elongated towards the tail, with smooth skin, firm to the touch, and slightly hard.
- Choose those with a bright, dark orange color, with fresh green tops still attached to the roots.
- Do not choose carrots with wilted tops, bruised bodies, slimy spots, or dark blemishes; pressing them should feel soft.
- Do not choose overly large carrots. The greens, stems at the base, and the shoulders of the root are thick and big because these are older carrots, which will have more fiber and less nutritional value.
