    To eliminate the unpleasant smell of beef, soak it in water mixed with 1 tablespoon of salt for about 15 minutes, then rinse and drain. Use a knife to slice the meat against the grain into thin, bite-sized pieces.

    Marinate the beef with 1 teaspoon of soy sauce, 1/4 teaspoon of pepper, then mix well and let the beef absorb the seasoning for about 15 – 20 minutes.

    To allow the seaweed to expand evenly and eliminate the fishy smell, after purchasing, place the seaweed in a basin, add 200ml of cold water, 4 slices of ginger, and soak for about 20 – 30 minutes until the seaweed becomes soft.

    Place a pot on the stove, add 2 liters of filtered water and the chicken bones, then bring to a boil. After that, reduce the heat and simmer the bones for about 30 minutes to 1 hour to extract all the sweetness, then remove the chicken bones.

    Tip: To save time, you can use pre-packaged pork or chicken broth.

    Heat a pan on the stove, add 1 tablespoon of sesame oil to the pan and heat it up.

    Next, add minced garlic, seaweed, and the marinated beef, stir-frying on high heat until the beef is just medium rare, then pour in all the chicken broth from earlier, cover, and cook for about 10 minutes.

    After about 10 minutes, add tofu and udon noodles, cover, and cook for another 5 minutes.

    Then, add 1/2 teaspoon of seasoning, 1 teaspoon of soy sauce, and stir well. Sprinkle in chopped green onions, adjust the seasoning to taste, and it’s done.

How to properly prepare seaweed

For dried seaweed: You can process and eliminate the fishy smell of seaweed using the following methods:

Soak seaweed in cold water for 15 – 20 minutes until it softens, add a little vinegar, gently massage for 1 – 2 minutes, then rinse clean with water.

  • Marinating with sesame oil

How to choose fresh and delicious beef
