Tofu 1 block Green onion 1 stalk Angel hair seaweed 10 gr Baby corn 10 ears Ginger 1 piece Tapioca starch 50 gr Soy sauce 1 tablespoon Vegetarian seasoning 1.5 tablespoons Sugar 1/3 tablespoon

How to choose delicious tofu

  • About color: Delicious tofu, which does not contain gypsum, will have an off-white color like soybeans. In contrast, if the tofu contains gypsum or has been stored for a long time, it will have a yellowish color.
  • About taste: You should buy tofu pieces that smell fragrant and have the characteristic rich flavor of soybeans. Avoid buying pieces with a faint smell of lime, as they will taste bland, dry, and crumbly, indicating the presence of impurities.
  • About weight and elasticity: Good tofu will have good elasticity, feels light when held, smooth, not hard, and easily crumbles.

How to make Vegetarian Seaweed Soup

  • Prepare the ingredients

    After buying the tofu, rinse it briefly with clean water and then use a knife to cut it into thick round slices about 1cm thick.

    After washing the baby corn, cut it into thin slices. For the green onion, take the white part, wash it clean, and cut it into small rings.

    Ginger, after peeling and washing, is cut into small strands. As for the hair seaweed, soak it in cold water for about 5 minutes to soften and expand.

    For the tapioca flour, mix it with 3 tablespoons of water.

  • Cooking soup

    Boil 1.5 liters of water. When the water boils, reduce the heat and stir the tapioca flour evenly, then slowly pour the tapioca flour into the pot while stirring continuously.

    Continue stirring the pot until you see the water thickening, then add the corn and stir.

    Next, prepare the seasoning. Before adding the seasoning to the pot, add 1.5 tablespoons of vegetarian seasoning, 1/3 tablespoon of sugar, and 1 tablespoon of soy sauce into a bowl, then stir everything well.

    Then, while stirring the soup pot, slowly pour the seasoning mixture in, and taste to adjust the flavor.

    After tasting the seasoning, add the tofu to the pot and stir gently.

    Now, take the hair seaweed, squeeze out the excess water, and use scissors to cut it into small pieces, then sprinkle the hair seaweed into the pot while stirring.

    Stir gently until you see the soup boiling, then add the green onion and ginger, stir well, and you can turn off the heat and enjoy.

    Tip:

    • If you want the broth to be sweeter, you can simmer it with some vegetables first, such as: mushrooms, corn, white radish, onions,…
    • Since tofu is very soft, stir gently; otherwise, the tofu will break apart and not taste good or look appealing.

  • Fresh shrimp are straight or slightly curved, with the head and legs firmly attached to the body, and the tail neatly folded together.
  • Absolutely do not buy shrimp with a fishy smell, dark patches on the shell or uneven coloration, slimy texture, and with tails splayed out, head and legs not firmly attached to the body.

  • Prepare the seaweed

    After purchasing the seaweed, place it in a bowl and pour cold water to soak for about 5 – 10 minutes for the seaweed to expand.

    Next, to clean the slime and eliminate the fishy smell, add 1 tablespoon of vinegar to the soaking seaweed, then rinse several times with water until clean.

    Wash the shrimp thoroughly, peel off the shell, devein it, and then use a knife to chop it finely.

    Next, peel 1/4 of a carrot, wash it, and then grate it finely. Chop the green onions into small pieces.

    Then, add all the chopped shrimp, grated carrot, chopped green onions, 1/2 teaspoon of salt, and 1/2 teaspoon of seasoning powder into a bowl, and mix the mixture well.

    First, you place a pot on the gas stove, then pour 500ml of water into the pot and bring it to a boil over medium heat.

    Once the water is boiling, you gradually add the shrimp balls into the pot and continue to cook for about 10 minutes.

    Next, you add the pre-processed seaweed into the pot and cook for about 5 more minutes, then season with 1 teaspoon of seasoning powder and 5 grams of rock sugar.

    After about 3 minutes of seasoning, you dissolve 1 teaspoon of tapioca flour in a little water, then add the diluted tapioca flour mixture into the soup. You continue to boil the soup for another 10 minutes.

    Finally, you taste and adjust the seasoning to your liking, then turn off the heat.
