Bananas 500 gr (ripe sứ bananas) Tapioca pearls 30 gr Potato starch 30 gr White sugar 170 gr Coconut milk 400 ml Peanuts 100 gr Sugar/ salt a little

How to make Banana Che with Tapioca Pearls and Coconut Milk

  • Prepare the ingredients

    Soak the tapioca pearls and potato starch in water for about 2 hours until they swell, then remove them.

    Peel the bananas, use a knife to slice them diagonally into small bite-sized pieces, then place them in a bowl, sprinkle with 50g of sugar and a little salt, and let them marinate for 15 minutes so that the bananas absorb the sugar evenly.

    Place a pan on the stove, wait until the pan is hot, then add the peanuts and roast while stirring gently over low heat for about 15 minutes until the peanuts are golden, cooked through, and their skins crack, then turn off the heat.

    After that, let them cool, then gently rub the peanuts to remove all the skins, place them in a bowl and use a pestle to crush them.

    Note:

    • To avoid the peanuts becoming soggy after roasting, you should wait for the pan to be hot before adding the peanuts!
    • To make the tapioca pearls and potato starch swell faster, you can soak them in warm water at about 60 degrees Celsius.
    • To enjoy the rich and fragrant flavor of the peanuts, do not crush them too finely.

  • Cooking the dessert

    Place a pot on the stove, add 700ml of water, and wait until the water starts to boil, then add 400ml of coconut milk and the marinated bananas.

    Stir well, cook over medium heat for about 5 minutes until the bananas are 70% cooked, then add the tapioca pearls, sweet potato flour, and 120g of sugar. Cook for another 10 minutes until the tapioca pearls and sweet potato are soft and expanded, then turn off the heat.

  • Prepare the ingredients

    Soak the tapioca pearls in water for about 30 minutes to let them expand.

    Peel the bananas, remove the fibers, lay them horizontally on a cutting board, and use a knife to cut them diagonally into thin, bite-sized pieces.

    Tip: Depending on your preference, you can use different types of bananas such as Sứ or Tây bananas as a substitute!

    Add 400ml of clean water to a pot, bring it to a boil, then add the tapioca pearls and cook for about 10 minutes over medium heat until the pearls are soft and swollen.
