How to choose good shrimp

  • When selecting fresh shrimp, you need to carefully check the shrimp shell to ensure they stay fresh for as long as possible.
  • Choose shrimp that have a flexible shell, are not broken or cracked, with heads and legs intact and firmly attached to the body.
  • Fresh shrimp shells should be shiny, smooth, and the body should be clear between the segments.
  • If the legs of the shrimp have turned black, this is not a good sign and the shrimp may be spoiled.

How to cook Cà Mau Grilled Shrimp

  • Prep the shrimp

    After purchasing the shrimp, wash them thoroughly, remove the heads, peel the shells halfway, and clean the veins along the back of the shrimp. Once you have prepared the shrimp, you should wash them with clean water once more.

  • Drying the shrimp

    After cleaning the shrimp, let them drain, then put all 1kg of cleaned shrimp into a bowl, add 1 tablespoon of monosodium glutamate and 1 tablespoon of fish sauce, mix well and marinate for about 10 – 15 minutes for the shrimp to absorb the seasoning.

    Note: For 1kg of shrimp, you only need to marinate with 1 tablespoon of monosodium glutamate and 1 tablespoon of fish sauce. If you’re preparing a larger quantity of shrimp, just double the amount of seasoning needed.

    After marinating, take the shrimp out to sun dry; just drying them in the sun for one day is enough.

    After the shrimp has dried, you need to pan-fry them one more time. Place the shrimp in a pan over low heat, turning both sides evenly until the shrimp are golden and fragrant.
