How to Make Pig Brain Soup

  • Prepare and Simmer the Pig Bones

    Wash the pig bones and lean pork you bought with diluted salt water, then rinse several times with clean water and let drain.

    To remove the smell of the pork, boil water and blanch the bone with the lean pork for about 3 – 4 minutes, then take it out.

    Add 2 liters of water to the pot, then add the bone and lean pork along with 3 small shallots chopped, 1 teaspoon of seasoning, 1/2 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, 1 teaspoon of sugar and simmer on low heat for about 30 minutes.

    After 30 minutes, when the lean pork is cooked, take it out, and continue to simmer for an additional 30 minutes to enhance the flavor of the broth.

    Tip: To keep the broth clear and tastier, you should frequently skim the foam while simmering the bones!

    When buying pig brain, soak it in diluted salt water for about 2 – 3 minutes, then use a sharp toothpick to remove all the membranes and blood vessels from the brain until it is completely clean, rinse gently with salt water and let it drain.

    Tip to eliminate the fishy smell of pig brain:

    • You must clean the membranes and blood vessels thoroughly!
    • Additionally, to remove the odor, you can soak the pig brain in diluted white wine with a few crushed ginger pieces.

    Place the pig brain in a bowl, season with 1/2 teaspoon of salt. Put a steaming pot on the stove, place the bowl of pig brain inside and steam it for about 20 minutes.

  • Preparing other ingredients

    Remove the stems from straw mushrooms and shiitake mushrooms, soak them in diluted salt water for about 10 minutes, then rinse them a few times with water. After that, drain and slice them thinly.

    Soak the snow fungus in cold water for about 10 – 15 minutes until fully expanded, cut off the stem and rinse again with water. Then chop the snow fungus into small pieces.

    Wash the green onions and coriander, then chop finely. Peel the carrot, wash it clean, cut it in half lengthwise, and then slice it thinly.

  • Tear pork and beat eggs

    The lean meat after boiling and cooling, you tear it into small pieces.

    You crack 2 eggs into a bowl and beat them.

  • Cook the soup

    The bone broth has been simmered for 1 hour, you take out the bone and add the carrots to cook. After about 2 minutes, you continue to add straw mushrooms, shiitake mushrooms, snow mushrooms, and shredded lean pork into the pot.

    You strain the eggs into the soup pot, while adding, you also use a ladle to stir evenly so that the eggs blend into the soup.

    To thicken the soup, you dilute 1 tablespoon of cornstarch with water and 2 tablespoons of tapioca flour, then gradually add the mixture to the pot and stir well. Cook for about 2 more minutes, season to taste, then turn off the heat.

    You serve the soup in a bowl, then add the pork brain, sprinkle with some finely chopped green onions and cilantro, and add a little ground pepper. The dish will taste better if served with some soy sauce and sesame oil!

    Place a pot of water on the stove; when the water starts to simmer, add the chicken breast and boil it on medium heat for about 7 – 10 minutes. Then remove the chicken breast, allow it to cool, and shred it into small pieces using your hands.
