How to choose fresh, clean, safe beef
- To choose fresh, clean beef, you should prioritize buying from reputable beef stores to ensure quality!
- Choose beef that is of moderate size, has a light pinkish color, and when pressed lightly with your hand, it should feel firm and not mushy.
- Conversely, do not choose beef that has a foul smell, pale green color, or unusual yellowing as these are signs that the beef has been left out for too long and has spoiled.
How to prepare Braised Beef Intestines with Chinese Herbs

Preliminary processing and stir-frying beef intestines
Place a pan on the stove, add 2 spoons of cooking oil and 2 fried garlic and turn the heat to high. If you don’t have fried garlic oil, you can use regular oil and then add some minced garlic to sauté until fragrant and golden!
How to clean and eliminate the fishy smell from beef intestines (ngẩu pín)- Step 1: Soak the beef intestines in diluted salt water for about 5 minutes, then rinse and drain in a colander.
- Step 2: Boil water, then blanch the beef intestines for about 3 – 5 minutes, then remove and place them in a bowl of cold water for 3 minutes, then use a knife to scrape off the outer skin of the beef intestines.
- Step 3: Finally, rub salt on the beef intestines one more time and rinse clean before starting the cooking process.
Once the oil is hot, add the cleaned beef intestines and stir-fry until firm. Use chopsticks to stir continuously for about 3 minutes, then add 1 teaspoon of MSG, 1 teaspoon of seasoning, 2 tablespoons of sugar, and 1 teaspoon of salt to the pan.
Continue to stir for another 2 – 3 minutes for the seasonings to dissolve completely.

Make beef tendon stewed with traditional herbs
After stir-frying the beef tendon, add 1 liter of coconut water to the pan and bring to a boil over high heat.
When the water boils, use a ladle to skim off the foam on top, then reduce the heat and simmer for about 45 minutes. Next, add 2 packets of traditional herbs (the kind used for cooking) and stir well so that the water covers the herbs.
Continue to simmer over low heat for another hour to ensure the tendon is tender. Finally, adjust the seasoning to taste and turn off the heat.

Final Product
Scoop the herbal beef stew into a small pot on a low flame. Prepare some leafy greens or your favorite vegetables to serve alongside.
