How to Choose Fresh Ingredients
How to choose bananas for dessert
- To choose bananas for dessert, you can select from West Indian bananas, royal bananas, or porcelain bananas depending on your preference. However, the best choice is still porcelain bananas because they have a moderate softness and a very distinctive aroma.
- You should choose bananas that are just ripe, medium-sized for the dessert to be fragrant and sweet.
- Avoid buying overly ripe bananas, as they will become mushy during cooking, and bananas that are not fully ripe will have a slightly bitter taste, making the dessert less enjoyable.
How to choose delicious cassava
- You should choose fresh, plump, straight tubers with smooth skin, as they will have less fiber, be soft, and sweet.
- Try using your fingernail to lightly scrape the thin outer skin; if the inner skin is light pink, choose it, if it’s white, you should skip it, because the pink skin will have fewer toxins than the white skin.
Information about tapioca flour
- Tapioca flour is a type of flour made from cassava tubers, with round grains, opaque white color. When cooked, it will turn translucent white and has a slightly chewy texture. Tapioca flour is used to create thickness and stickiness for desserts, while also providing a delicious feeling when eaten.
- You can easily find tapioca flour in grocery stores, markets, supermarkets, or specialty stores that sell baking and dessert ingredients.
How to make Steamed Banana with Cassava Dessert
-
Prepare the ingredients
Dissolve 1 tablespoon of salt in water, then peel the bananas and soak them in the diluted salt water for about 5 minutes, then remove and drain.
Peel the cassava and soak it in water mixed with 1/2 tablespoon of salt for 1 hour. After that, take it out, rinse it with cold water, and cut it into pieces about 2 fingers thick.
The cassava flour and sago flour should also be soaked in water for about 30 minutes.
After soaking, boil the sago flour and cassava flour in boiling water until the sago and cassava flour become translucent and float, then remove and soak them in cold water to prevent sticking together.
-
Stir-fry bananas with sugar
After soaking, take the bananas out and add 100g of sugar and 1 tablespoon of rice wine, mix well and marinate the bananas for 1 hour.
After marinating, proceed to stir-fry the bananas. When stir-frying, use low heat and gently stir so the bananas do not burn or get mushy. Stir-fry until the sugar completely dissolves and is evenly absorbed by the bananas.
-
Cook cassava with coconut milk
Prepare 1 liter of coconut milk and pour it into a pot, then add the cassava, followed by 2 pandan leaves and 1/2 teaspoon of salt.
Cover the pot and cook over medium heat until the cassava becomes translucent, then reduce the heat and add the stir-fried bananas and 100g of palm sugar to cook on low heat.
After cooking for about 5 minutes, remove the pandan leaves. Then, dissolve 1/2 tablespoon of tapioca flour in 1 tablespoon of water and add it to the pot, stirring in one direction until the pudding thickens and becomes smooth.
Next, add the potato starch and sago to the pot and stir well. Finally, add another 500ml of coconut milk and continue to cook on low heat until the pudding begins to simmer, then turn off the heat.
