  • Good beef usually has a dark red color, fat that is cloudy white, when pressed retains its elasticity and does not stick to the hand, and has the characteristic smell of raw meat.
  • For tendon beef, choose those with small tendons; they will soften quickly when cooked and have more meat, or you can buy any part of the beef that you like for cooking.
  • Avoid choosing minced beef, meat with strange white spots, pale color, slimy texture, or unusual smell as these indicate that the meat has been stored for too long and will not be safe to eat.

How to Prepare Beef Noodles

  • Prepare the Ingredients

    Beef should be washed thoroughly several times with water, drained, and then cut into bite-sized pieces.

    Simple Tips to Eliminate the Smell of Beef:

    • Method 1: After washing the beef, marinate it with a little ginger that has been smashed for 3 – 5 minutes, then rinse with clean water, cut into bite-sized pieces, and it is ready to cook.
    • Method 2: You can soak the beef in white wine for about 15 minutes to better eliminate the smell.
    • Method 3: Rinse the meat briefly with cold water, then blanch it in hot water (not boiling), remove it, and cut into bite-sized pieces.

    Garlic and shallots should be peeled, rinsed lightly with water, minced with 2 stalks of lemongrass, and the remaining stalk cut into pieces about 3 finger lengths.

    Bean sprouts should be rinsed with water 2 – 3 times, then the sprouts and dry noodles should be blanched in boiling water for about 5 minutes, then removed and drained in a basket.

    Coriander should be trimmed by removing the roots, discarding wilted leaves, rinsed with water, and minced finely.

  • Stew the beef

    Place a pot on the stove, add 1 tablespoon of cooking oil and heat over medium heat. When the oil is hot, add minced shallots, garlic, and lemongrass to sauté until fragrant.

    Then add the beef and stir-fry for about 3 minutes, then add the chopped lemongrass and stir evenly.

    Season the pot with 1 tablespoon of fish sauce and 1 tablespoon of annatto oil, stir to coat the beef with the spices. Next, add 2 cups of water (rice bowl) and stew the beef for about 15 minutes on low heat.

    Next, add 1 teaspoon of salt, 1 tablespoon of fish sauce, 1 teaspoon of ground pepper, and a bit of finely chopped cilantro to the pot, adjust the seasoning to taste, then turn off the heat.
