Garlic and shallots should be peeled, rinsed lightly with water, minced with 2 stalks of lemongrass, and the remaining stalk cut into pieces about 3 finger lengths.
Bean sprouts should be rinsed with water 2 – 3 times, then the sprouts and dry noodles should be blanched in boiling water for about 5 minutes, then removed and drained in a basket.
