How to choose fresh ingredients
How to choose fresh ground beef
- You should choose ground beef that has a bright red color, is not slimy on the surface, and does not have an unusual smell.
- To ensure the freshness of the meat, you can buy it from reputable meat shops, supermarkets, or traditional markets.
- Furthermore, you can also buy the meat and grind it at home to ensure the taste and freshness of the meat.
How to choose fresh and delicious tomatoes
- Fresh and clean tomatoes are those that have a red color, rounded shape, look plump and juicy, and have a thin, shiny outer skin.
- Additionally, freshly harvested tomatoes that taste fresh and delicious are those with fresh green stems that are tightly attached to the body, not separating.
- Moreover, you should avoid buying tomatoes that are overripe, bruised, uneven in color, feel soft and mushy to the touch, as these are signs that the tomatoes have been stored for too long.
How to prepare Beef noodle soup with tomatoes
-
Prepare the ingredients
Green onions should be washed clean with cold water, then drained and chopped finely.
Coriander should be cut off at the root, washed thoroughly, especially the root part to avoid any mud sticking to the stems, then drained and chopped finely.
Pennywort leaves should be picked and washed clean with water, then drained and chopped finely but not too mushy!
Garlic should be peeled, crushed, and minced until finely chopped.
Tomatoes should be washed clean, drained, then the stems removed and cut into wedges.
-
Marinate the beef
Add the minced beef into a bowl, then add 2 tablespoons of cooking oil, 1 tablespoon of seasoning, 1 teaspoon of sugar, 1/2 teaspoon of pepper, and 1 tablespoon of chopped green onions. Use a spoon to mix well and marinate for 15 minutes.
Tip: If you buy minced beef that already contains some fat, you do not need to add too much cooking oil. If you are on a diet, you can completely omit the oil! However, you should choose meat with some fat; otherwise, the beef will be dry after cooking. -
Sauté tomatoes and beef
Place a pot on the stove, add 1 tablespoon of cooking oil, turn the heat to high to heat the oil, then add 1/2 of the minced garlic to fry until fragrant.
When the garlic is fragrant, add the tomatoes and stir-fry on high heat, then add 1 teaspoon of sugar and 1 teaspoon of seasoning, continuing to stir-fry until the tomatoes release their juice. Then add water to about halfway up the pot and continue to simmer.
Next, heat a pan on the stove, add 1 tablespoon of cooking oil, then add the remaining minced garlic and fry until fragrant over high heat, then add the marinated beef and stir-fry for 2 minutes.
-
Prepare the broth
When the water in the pot has boiled, add the stir-fried beef and continue to cook on high heat until the beef is cooked, then lower the heat and it’s ready to enjoy with the noodles!
Tip: When preparing the broth, you should not cover the pot, as it will cause the broth to overflow and become cloudy. -
Finish
Take a bowl and add fresh noodles, then add chopped green onions and Vietnamese coriander. For those who enjoy it, the more green onions and Vietnamese coriander you add, the more fragrant and delicious the noodles will be!
Pour the boiling broth into the bowl, and you can enjoy it right away.
